Sauteed veggies

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your Christmas menu?

This week we are having the following:

Monday: London broil in slow cooker with carrots and mushrooms and french onion soup, egg noodles

Tuesday: BBQ chicken sliders (chicken on sale for $1.99/lb and cooked in the slow cooker), corn, clementine slices

Wednesday: Stir fry tofu and sauteed zucchini and mushrooms, egg rolls

Thursday: Chicken alfredo, broccoli, crescent rolls

Friday: Dinner with family - still working on the menu. Merry Christmas to everyone celebrating!

    EI Bound - With that many people, I would do the mushrooms, a triple batch of Mississippi Sin and Seasoned Oyster Cr*ckers.

    Hidden Valley Ranch Oyster Cr*ckers
    1/2 cup salad oil
    1 envelope (1 oz.) Hidden Valley Ranch Salad Dressing Mix
    3/4 teaspoon dill weed
    1/2 teaspoon lemon pepper
    1/2 teaspoon garlic powder
    12 to 16 oz. oyster cr*ckers

    Whisk together the first five ingredients. Pour over cr*ckers, stirring to coat. Place on baking sheet and bake at 275 degrees for 15-20 minutes. This can easily be doubled or tripled.

    Thanks guys, I have done the meatballs with grape jelly and they are awesome...really liking the mushrooms ideas and Mississippi Sin..hubby's family is about 30 strong and I was running out of ideas. They look to us for something different every year--for Thanksgiving we did sweet potato homemade bread, apple dumplings (using sundrop) and a mexican platter using cream cheese, homemade thick salsa with cheddar cheese (HT special) and red onion and dipper chips.

    EI Bound - Here is one of my go to recipes if you have access to a oven.

    Mississippi Sin
    8 oz cream cheese - softened
    8 oz cheddar cheese - shredded
    8 oz sour cream
    5 slices of deli ham - chopped
    3 green onions - chopped
    1 small can of green chilies

    Mix all ingredients together. Place in a shallow casserole dish. Bake at 350 degrees for about 30 minutes until cheese in melted and bubbling. I normally top it with more cheddar cheese before baking. Serve with scoop type chips. This recipe doubles and triples nicely. I have made it in a crock pot but it burns quickly if you don't stir it very often. You can use other cheeses (like pepper jack) if you want. Sometimes I just use whatever I have in the fridge and top with cheddar.

    raesmom1612 - I looked at turkeys at Walmart today( to get a spare for the freezer ) -
    I found Honeysuckle White were $.59/lb and Butterballs a were $.79/lb - these may have been " in store" deals - prices may vary between stores.

    raesmom1612 - come on down! I only got a 1.2 lb London broil, so we will all get about 4 bites, but I'm sure it will be tasty. lol

    There are a TON of good turkey sales this week. Now is a great time to get a ham. Here is the Just the Basics list from Thursday. Scroll down to the Meat section for all the deals.

    Turkey sales: Carlie C's has turkey a whole frozen turkey on sale for .88/lb. HT and Kroger have frozen whole turkey for .99/lb. Aldi has Butterball turkey for $1.19/lb.

    EI bound - With my mushroom obsession, you know I have a mushroom appetizer....or two. Here's the link to Parmesan Ranch Mushrooms in the slow cooker. I have made them multiple times with 1/2 the butter and 2 to 3 times the mushrooms - because you can never have too many mushrooms. :-) also love spinach and artichoke dip with cr@ ckers and veggies to dip with. It can be made ahead of time then popped into the oven 25 minutes before needed. Here's an easy recipe. You can also substitute chopped canned MUSHROOMS for the artichokes (more frugal).

    Monday: crockpot country steak, mash potatoes and gravy, steamed broccoli, biscuits
    Tuesday: BBQ pork chops,Mac not cheese,salad, corn muffins
    Wednesday: baked chicken with rice, green beans, garlic toast
    Thursday: left overs
    Friday: not sure yet

    El Bound-my fav is meatballs. I do a jar of Heinz chili sauce and a small jar of grape jelly with 2 bags of frozen meatballs, let the compliments pour in. Also my 1,2,3 dip......1 pound ground beef (or ground sausage or turkey depending on your crowd), 2 8oz packages of cream cheese and 3 cans of rotel tomatoes serve with chips.....yum yum

    El Bound, baked stuffed mushrooms, cherry tomatoes have filled with Alouette garlic and herb spread, a small round of brie topped with your favorite jam and then covered in puff pastry and baked, bruschetta with assorted toppings, caprese salad on a skewer. Actually anything served on the skewer is fun. Olives, some salami filled with cream cheese and rolled up, or cantaloupe wrapped in prosciutto. Now I'm hungry. Lol
