Parmesan mushrooms

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Our meals this week include:

Monday: Slow cooker chicken served on romaine with various veggies and balsamic vinegar/olive oil dressing

Tuesday: Shrimp and pasta, parmesan mushrooms in the slow cooker, steamed carrots, garlic bread

You can find the recipe for the parmesan mushrooms at food.com. They are delicious and one of my daughters requested them for dinner this week.

Wednesday: Sesame ginger tofu, rice and broccoli

Thursday: Baked tilapia, baked sweet potatoes, side salad

Friday: Spinach and mushroom quiche, fruit salad

    Nanee - I agree -1 birthday per year is enough!

    lindabates - great job making a menu for the whole week. Should I let you know ahead of time which nights the blog caravan will be stopping by?? lol

    No Faye, already had one this year and that was enough, HaHa! It was my son-in-laws birthday. I always let the birthday person choose their menu and he did good. I sent the hot fudge cake home with him to finish. We made plates of food for our shut-in friends with the rest tonight after we ate. Hubby will not eat it but so many times and you know I am not going to waste food.

    I am thinking about making a chicken pastry one night this week along with some sweet potatoes. A friend gave us a box of sweet potatoes and can't wait to bake some.

    Then I may have some manwich sandwiches with homemade French fries one night. Not good for me but do love it.

    I went ahead and planned our menu through Sunday night.

    Monday: BBQ chicken, chicken rice a roni, baked beans

    Tuesday: Taco Tuesday

    Wednesday: Fish or Shrimp w fries

    Thursday: Breakfast for dinner

    Friday: Fend for self

    Saturday: Loaded baked potato night

    Sunday: crockpot pulled pork, Mac n cheese, green beans

    jdouglas13 - let's just say that I usually eat a couple (hundred) before the bowl makes it to the table. LOL And your BBQ sauce sounds really tasty.

    RaleighFoodBlogger - I love your menu this week! And I hear ya about simplifying dinners. I have been doing that since this summer and we eat healthier and I spend less time in the kitchen cleaning. It's a win/win!

    Last night we made chicken pot pie from scratch and it was amazingly delicious as always! White and dark meat chicken, potatoes, carrots, corn, green beans all in a cream sauce with a batter crust.

    Tonight we are making something with spaghetti squash, I just don't know what yet. I need to use up this last squash from the Aldi sale a few weeks ago and I'm tired of red sauce. So I'm looking for a new recipe to try.....

    I have a $5 mobile coupon for Panera so the girls are going to have Mac and cheese in a bread bowl tonight. I'm going to finish up the leftover chicken from several nights ago on a salad. Tuesday is beef stroganoff with enough leftover for Thursday night's dinner. Wednesday for the girls is Papa John's as I leave for Vegas :) early that morning to meet up with DH who is on a business trip. The pizza is free from a coupon they sent us after taking an hour and a half to deliver a pizza one day. Friday and Saturday for the girls will be whatever Grandpa prepares as I'll still be living it up out of town :)

    Ascherer, that's my favorite way to make eggplant parm. So glad you liked it!! Your Momma sounds like a great cook.

    Faye, those mushrooms look awesome. Are there fights over them? Just kidding ;)

    Raesmom, I REALLY totally get it about feeding or not feeding my DW and DPofN LOL!

    Tonight is mac & cheese with some hidden broccoli and leftover ribs.

    The BBQ sauce was really good, and I didn't even cook it before I put it on the ribs. Just let it bake on the ribs in the oven for an extra 15 or 20 minutes. Sorry I can't offer a decent recipe, but basically is was ketchup, soy sauce or tamari, apple cider vinegar, Dijon mustard, granulated sugar, dried minced garlic and onion, black pepper, ginger powder, and some garlic and onion powder in case the minced wasn't enough. It was about 1/3 cup sugar to 1 1/2 cups ketchup. Just add ingredients until it tastes good to you.

    Tonight is all leftovers - pork chops, baked potatoes, salad, and strawberry shortcake.

    Tuesday - I go back home. Dinner will be leftover eggplant parm that Momma made and I want DH to try it. It was so good. She made it a little different. Instead of breading and frying it, she rubbed a little EVOO & herbs on the eggplant and baked it for about 10 minutes on each side. Then she combined everything and baked that.

    Wed - Thurs - Fri are up in the air until I get home and see what I can find or what is on sale.

    On a positive note - DH softball season is finally over. It doesn't start back up until late March/early April.
