Chicken Enchiladas

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Our meals this week include:

Monday: Shrimp Lo Mein, sauteed zucchini and mushrooms, crab rangoon

Tuesday: Chicken enchiladas, rice, green beans

Wednesday: Breakfast for dinner: veggie omelets with cheese, turkey bacon, biscuits and fruit salad (including the raspberries on sale for $1.25 at Harris Teeter)

Thursday: Chicken salad on a big green salad, rolls

Friday: Grilled cheese sandwiches and veggie soup

    VLYNN, here is the butternut squash soup recipe you asked for yesterday. I made this one up last year because all the ones I tried off the internet were too sweet.

    Ingredients:
    2 Butternut Squashes (5 lb total)
    4 large or 8 small Russet Potatoes
    2 Apples
    1 large Onion
    4 cups Chicken Broth
    2 blocks Cream Cheese Salt Pepper Cinnamon

    Peel and dice the squash, apples, potatoes, and onion. Add them in the crock pot with the chicken broth. Add a dash or two of salt, some ground black pepper and cinnamon to taste. Cook on high for 3-4 hours. Blend the cooked mixture to your preferred consistency. Add the cream cheese and cook on low for 30 minutes. Mix with a wire whisk until smooth. Enjoy!

    MERIDETH88 re butternut squash soup recipe: Would you post your recipe? The ones I've tried just don't seem to turn out well for me, so maybe yours would do better!

    Making use of many frozen goodies and heaven knows I need to make some room. Monday-Brunswick Stew made with left over grilled chicken and pork tenderloin and frozen vegs from the freezer. Tuesday-Pizza with HT pizza dough, cremini mushrooms, pepperoni, mozzarella, and fresh basil AND a tossed salad, Wednesday-BLTs bacon from freezer and Homemade chicken soup, Thursday-Grilled hamburgers or steak both from freezer! Friday-somebody needs to take me to dinner.

    Yall are on top of it this week!! I have no set in stone menu at all, I'm riding the caravan with granoftwenty :)

    Mon leftovers from yesterday (chicken mashed potaoes gravy and corn)

    Tues some sort of pork chop maybe rice and beans and my craving for this pregnancy a strawberry sundae with extra strawberries and whipped cream from dairy queen (which work since Tuesdays from 5-8 pm is family night, last week was saw Snow White, this week its a pirate lady doing face painting and balloon animals)

    Wed Pasta (maybe dare I say......BAKED ZITI!!)

    Thurs if Wed was baked ziti, then leftovers

    Fri really craving little cesars so if I can hold off til Friday it will finally be little cesars :)

    Thanks Faye! Last winter I just made up my own recipe for the butternut squash soup and it turned out so much better than any of the ones I've found online that now I just make one huge batch of it each fall and freeze it in snack size ziplocs for meals all year long. It reheats just as well as when it's fresh!

    JDOUGLAS13 - We have discovered grilled (!) Cauliflower and love it
    .Stuffed peppers do sound good this week
    HUM - I may just drive the caravan and not have to cook ! LOL
    I want to make a bread recipe I just found sometime this week : an autumn bread with butternut squash applesauce , dried cranberries and walnuts in it - Tonight - grandchild's birthday so his request is : fried chicken , mashed potatoes, gravy and homemade coleslaw . snow peas and applesauce cake with cream cheese frosting

    Last night we had burgers on the grill and potato salad - yay for sun! :)

    This week's menu (ha!) will include yellow peppers stuffed with rice, spinach, parm and sausage; homemade pizza sounds good - either white with prosciutto or sausage with tomato sauce, and spaghetti since it seems like forever since I've had it. I also have a cauliflower that I need to use (usually roast with evoo, garlic, parm, breadcrumbs), so I may have that with baked chicken drumsticks one night. It's one of my favorite super easy dinners. The garden is also calling with lots of various greens, so I need to do something with that.

    Spicy Smoked Sausage Alfredo Bake (I used hillshire farm smoked turkey sausage), toss salad, and sister shubert's dinner yeast rolls!!!
