    ASCHERER, I think you could. I've had this recipe for years (sadly I don't know where it came from) and the comment to use a sweetener of your choice is from the original recipe. Faye, let me know how the 1/2 C sugar turns out. I used 3/4 C last night and this am they tasted great, not overly sweet. I used lite sour cream by the way, not non-fat. My mistake.

    WalkerWest & Faye - I wound if you could use a sugar substitute or even honey. If either of you try it that way, please let me know. I think my DH might like these.

    I just copied, pasted and printed it, Walkerwest. Thank you! It fits very nicely with my healthier eating habits these days. I am going to try it with the 1/2 cup of sugar.

    Too good not to share:
    Oatmeal Banana Breakfast Muffins - Gluten Free
    Combine all in blender:
    2.5 C old fashioned oatmeal
    1 C plain greek yogurt (I used non-fat sour cream)
    2 eggs
    3/4 C sugar (I think you could use 1/2 C) 1.5 tsp baking powder 1/2 tsp baking soda 2 over ripe bananas Preheat oven to 400. Spray muffin tin or use liners. Place all in blender and blend until oats are smooth. (I added oats 1 C @ a time & blended in between). Divide into liners & bake 15-20 min. Delicious!!

    Thanks, Faye! I love to cook. I relaxes me, especially baking. As you see it's a week inspired by Pinterest. lol! I'll look for the Pioneer Woman's cookware. Good for her!

    Meredith, your menu sounds wonderful! Keeping it very simple here tonight with Dutch baby pancake with breakfast sausage. Garnertoy, I wish I had the energy to make your full-on BFD. Yum!

    Raesmom, a sleepy little girl can be a good thing! ;) I really have to try your stuffed meatballs one of these days.

    Tonight: spaghetti, corn, garlic bread
    Tomorrow: pork chops, Mac n cheese, corn muffins
    Wednesday: leftovers
    Thursday: fish, fries, hushpuppies for girls shrimp scampi for husband
    Friday: whatever everybody fixes themselves.. I'm taking night off & staying out of the kitchen

    walkerwest - Well, I am pretty inspired by your Apple Cinnamon Oatmeal in the crockpot, Oatmeal Banana Muffins, Leek & Potato Galette and your Lemon Chicken Pasta. Compared to my chaos week menu, yours is fabulous! Actually, compared to my normal weekly menu, yours is fabulous! lol Thanks for posting.

    Did you see that Bree from Pioneer Woman now has a whole line of pots and pans and dishes among other things? I saw them in Walmart today. They are very country and colorful. She has really made quite a name for herself in the cooking world.

    I'm having an uninspired week this week. Some weeks I'm all about food, others it just doesn't flow. The good news is I spent only about $30 at the grocery (with no coupons) because I have most things in the pantry/freezer already. Here's what we're having:
    Mon - Chicken fried rice (pinterest) along w/ frozen eggrolls
    Tues - Lemon Chicken Pasta w Broccoli (pinterest)
    Wed - Leek & Potato Galette (pinterest) w/ ham, peas and stewed apples
    Thurs - spinach salad w bacon dressing (Pioneer Woman)
    Fri - homemade fish sticks, garlic parmesan fries (pinterest), & a green veg of some sort.
    Trying Apple Cinnamon Oatmeal in the crockpot this week and using up soft bananas in Oatmeal Banana Muffins. :)

    Faye- wow, hope the move went well... and I feel for you!

    Everyone's dinners and weekly plans sound so delicious. Tonight I'm doing a repeat of the honey balsamic pork chops with roasted Brussels sprouts- yum! And still not sure on the rest of the week, yet.
