What's on your menu tonight?

Here's our menu for the week:

Cheese ravioli, garlic bread, roasted asparagus

Shrimp on a salad with deviled eggs on the side

Baked lemon pepper chicken, baked sweet potatoes, side salad

Homemade pizzas with alfredo sauce, mozzarella, parmesan, spinach, mushrooms and black olives and pre-made thin crusts

Snickerdoodle Blondies Recipe

I saw a recipe for Snickerdoodle Blondies last week and knew I needed to make them asap. I was right!

They were easy to make and I had all the ingredients at home so I made them Sunday evening. You can see those tasty little sugar bombs in the photo above. I think I may add either white chocolate chips or milk chocolate chips when I make them again.

They were delicious and would have been even better with some vanilla ice cream right out of the oven. Next time I will be prepared.

    lindabates - another tip that has worked wonders for me is to keep a daily food journal. I track everything I eat all day long so I know how many calories, grams of protein and grams of fat I have eaten. It really keeps me accountable.

    Faye- YAY! Hope you like it. And yes, my folks are the best. They brought me the HT ad last week and pointed out the B2G3 cokes... and were excited about it. Love rubbing off on them :)

    Faye- have you tried the new Nature's Own Life 100% Whole Wheat/no sugar bread? Loved getting it on sale at HT and with coupon this week. It's really good! My folks who have been eating brioche bread from Fresh Market (I know!) have even liked it :)

    Lindabates- I have done low carb most of my adult life (and mainly due to being allergic to so much like soy, veggies, etc... I almost died when I went vegan lol!) I highly recommend the Suzanne Somers Somercizing books. They are pretty old, but the second and third one have some really fantastic recipe (she does food combining, but much of it is what now qualifies as low carb). The fourth one, she started adding in a bunch of processed foods (mainly her products- ugh!) I always keep it simple with lots of chicken/turkey, salads, veggies. And I use a lot of balsamic drizzles, caramelized onions and strong cheese like blue cheese crumbles to add a bunch of flavor. Another thing I love to do is do a sheet pan dinner w/roasted veggies and chicken sausage.

    Monday- Shrimp, white bean, tomato skillet with broccoli
    Tues & Wed- Finally doing the low carb taco bake and salad
    Thurs- Chopped Chicken Salads
    Fri- Beef Rice Special
    Not sure on the weekend yet.

    lindabates - I have been doing the low carb thing for a while now and it has worked well for me.

    I basically substitute veggies for the part of the meal that I would usually eat a carb (like bread, pasta, rice). The carbs I do eat are higher quality carbs like sweet potatoes, 100% whole wheat bread, whole wheat pasta, etc. I eat a lot of protein on a salad for meals (like BBQ chicken on a salad, cajun shrimp on a salad, egg salad...on a salad).

    I drink a protein powder and yogurt smoothie every morning for breakfast as well to start the day with plenty of protein and it keeps me full for hours. I often add fresh spinach to the blender to boost nutrition. You really can't taste it.

    Snacks include veggies, apples, berries, peaches, cheese sticks, cottage cheese, celery with a little peanut butter, raw almonds or walnuts, Greek yogurt
