Weekly meal plan & Monday meals

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week, our meals include:

Meatless Monday: Teriyaki sesame tofu, stir fry veggies, brown rice  (tofu on sale last week at HT with coupon)

Tuesday: Baked Ziti, garlic rolls, salad 

Wednesday:  BBQ chicken sliders, cole slaw, corn on the cob  ($1.99/lb chicken breasts from HT meat case cooked in slow cooker with BBQ sauce, onions, garlic powder)

Thursday:  Grilled turkey and Swiss cheese sandwiches on rye with a side of homemade veggie soup (made soup last week and froze a bunch for future meals)

Friday:  Homemade veggie pizzas, broccoli, fruit of some kind

    meredith88- I hope your husband's aunt is feeling better very soon. It's so kind of you to bring her dinner. And your meal plan looks great!

    ascherer - I'll be there for dinner on Wednesday! lol

    raesmom1612 - can't wait to hear what you think. I bought more apples a few days ago and biscuits today and plan to make them again this week, at my daughter's request.

    For once I have a weekly meal plan and have already changed it. (I forgot to thaw the hamburger for tacos today.)

    Monday - Kentucky Hot Brown Bake with a side salad
    Tuesday - Tacos with all the trimmings
    Wednesday - Homemade Outback Alice Springs Chicken and baked sweet potatoes
    Thursday - Chef salad or breakfast
    Friday - Gourmet Buffet

    Good looking dinners/menus everyone!

    Hubby is on night shift this week so since I have time for dinner I will be making a meatloaf with homemade mashed potato's and some sort of a veggie. I was able to keep them away from the apples, so Faye I am going to try the apple dumpling from last week (wish me luck lol)

    Last night we had BLTs with bacon from a great sale at HT a few months ago that I froze & tomatoes picked from our garden.

    Monday: Tonight we are taking food to my husband's aunt who is very ill. She can only eat soft foods so we will either stop and buy Panera or Noodles & Co soup on the way to her house. Not frugal but totally worth it for family :)

    Tuesday: Tacos with the other half of the seasoned ground beef from stuffed peppers last week. We have everything on hand from sales at HT.

    Wednesday: Lomein that my husband's coworker made for us.

    Thursday: Mushroom pork chops that we made last week and couldn't finish. We will have rice and asparagus to go with them.

    Friday: Home made veggie pizzas with dough from a HT sale and fresh veggies from Aldi the last couple weeks and from our garden.

    Saturday: Leftovers because our fridge is busting at the seams.

    Also, Thursday night we will be cooking and canning about 8 quarts of fresh salsa to finally clear some space in our fridge.

    Packy-long time no see!!!!
    Boneless beef ribs on markdown bought a few months ago for $1.09/lb. Will grill them. Baked potatoes, fried okara, creamed spinach, and steamed broccoli. Lemon bars made with the kids help for dessert.

    jdouglas13 - it was the HT on Tryon and Walnut in Cary.

    UNCW_Ash - great looking menu! Honey chicken sounds yummy.

    live2coupon2save - the coupon for a free gallon of milk with 4 kelloggs cereals was in the 9/14 RP insert. It is not a catalina register coupon.

    I know this has nothing to do with meal planning but, when I went to HT today, I purchased 4 boxes of Kellogg cereal each 10. something oz. I noticed that I did not receive a coupon for a free gallon of milk. Did I read this wrong? I saw it on several coupon sites and maybe I misunderstood. I called CS and the lady I talked to told me she never heard of that.

    My finger survived ;) I was just trying to do too much in too small a space on my counter and my finger got in the way. DW is an amazing nurse and has taken great care of it for me as I'm not good with blood. RFB, I've heard about those gloves and wondered if they really work. I would definitely not want to get cut on a mandolin. OWWW!

    Faye, I was surprised when I saw you were having burgers! ;) How awesome that the HT manager subbed the ricotta for you. Which HT? I need to get some RC for ricotta because I got the last 2 at Clayton yesterday.

    Faye- I agree... I love anything with caramelized onions! And love that HT was so great... they really do go out of their way for us!
