What's on your menu for the week?

On our menu this you will find:

BBQ chicken, rice, green beans, watermelon (from Aldi for $2.99/lb through 6/14)

Shrimp and pasta alfredo, garlic bread, salad, grapes (from Aldi for .98/lb through 6/14)

Stuffed yellow and red peppers, French bread

Chicken enchiladas, corn, and a tomato and cucumber salad

Veggie corn dogs, homemade mac & cheese, steamed carrots

    jdouglas13 - I have always loved multi-colored peppers and the girls do too but unless they are $1 or less each, I won't buy them. Aldi had them for even less than that so I bought a 3-pack. Yum!

    lindabates - It's been too long since I have made home made chicken pot pie but I love it! It may have to surface soon on my menu. Thanks for the idea. :-)

    We must all be on the same page with the eggplant. Meredith, your version of eggplant parm sounds amazing. I used to make it that way back in the day every once in a great while since it is so labor intensive. Now I slice it (skin on) 1/2 " thick, drizzle or spray with EVOO and bake on a lined sheet pan until tender. Then I layer it as you would for any other eggplant parm with marinara and mozz, and bake until hot and cheese is melted and just a little browned. I want to try a version where I roast slices of tomatoes and substitute them for the marinara. I think it might be tasty.

    Tonight we are having a Asian flavored concoction. Rice with toasted sesame seeds, leftover London broil sliced super thin, fresh sugar snap peas, roasted red peppers, roasted broccoli, sliced water chestnuts, scallions, sliced radishes. The dressing has OJ concentrate, honey, sesame oil, tamari, rice vinegar, garlic, and fresh minced ginger. Tamari is similar to soy sauce, but I believe is gluten free.

    We have too many showings on our house tonight to be able to get home long enough to cook dinner. So we are going out to eat :-) We're trying a Korean restaurant right beside our house that I've heard great things about. Might as well go there while it's 5 minutes away and not the 35 minutes it will be soon!

    I also got one of the $0.99/lb eggplants from Kroger this weekend and cooked it up last night. I triple breaded and fried it and made it into eggplant parmesan. Better than any restaurant version I've ever had!!!

    Speaking of the .99/lb Kroger eggplant from last week, I skinned and cut mine up, then oven-roasted it, which I hadn't tried with eggplant before - very yummy!

    Monday: shake n bake pork chops, mash potatoes, and baked beans, biscuits and brownies for dessert
    Tuesday: sandwich and chips
    Wednesday: crockpot meal
    Thursday: home made chicken pot pie
    Friday: not sure yet

    Sausage Works sausages on the grill for DH and DDs. On sale for BOGO a couple weeks ago at Lowe's. Great price for fresh sausage. I'm going to have a grilled portabella burger.

    ybaverage2003 - that is a healthy stir fry and it sounds delicious!

    coupon4me - did you cook the eggplant in the slow cooker with the roast? I have never heard of doing that.
