Chicken soft tacos

What's on your menu for the week?

This week, we'll be eating:

Monday: We are planning on grilling, but with the expected rain, we may be cooking inside instead. We are having Hebrew National reduced fat beef hot dogs (with all the condiments), BBQ chicken and cheddar baked wontons, corn on the cob, watermelon, angel food cake with strawberries and whipped cream. Baked tortilla chips, veggies, hummus and salsa as appetizers.

Teriyaki shrimp with sauteed zucchini, mushrooms and onions, egg rolls

Chicken alfredo on penne pasta, salad, garlic bread

Italian baked tofu, roasted sweet potatoes, salad

Chicken, cheese and veggie soft tacos, corn

    Tonight was a bacon and tomato sandwich.
    Tuesday is leftover BBQ.
    Wednesday a chef salad once Momma gets home from her trip.
    Thursday and Friday, I have no clue. Probably whatever Momma wants.

    I'm still not sure when I am heading back home. More than likely it will be either Thursday or Saturday so I can miss most of the traffic.

    raesmom1612 - I always use reduced fat sour cream in baked ziti and nobody notices here. That may be a better option. And I am impressed that you are trying to help your family make better food choices. I hope they are receptive when you go to visit them. And a big thanks from me to your hubby for his service!!

    Those brownies from yesterday were amazing!! As for the ziti.....they noticed as did I. They yogurt kinda clumped up a bit and wasn't as creamy as the sour cream is. I think next time I will mix it with sour cream. I'm trying a bunch of new "healthier" recipes bc the girls and I are going home for the summer and I want to try to show my family (mom, dad, Grama and lil sis) that eating healthy isnt hard, isn't expensive and still taste amazing.

    Monday-left over baked ziti

    Tues&Wed-chicken drumsticks in the oven with Mac and cheese and broccoli

    Thurs&Fri-pork chops with gravy mashed potatoes, corn on the cob and biscuits. Found a recipe in Pinterest for "yeast free dinner rolls" gonna give them a shot.
