Shrimp and pasta alfredo

This week, we'll be eating:

Homemade veggie pizza, salad

Chicken enchiladas, rice, salad

Shrimp and pasta alfredo, side of sauteed zucchini, mushrooms and onions

Baked chicken, green beans, roasted sweet potatoes

Southwestern egg and cheese tortillas roll-ups, fruit salad

    In no particular order:
    Cubed steak (HT clearance) using the recipe posted on here last week with rice and green beans
    Carne asada tacos using marinated skirt steak (HT clearance) with fixings
    Italian sausage on rolls with peppers and onions OR grilled chicken sandwiches with baked french fries and fruit salad
    Hamburger steak with potatoes and field peas

    Another really crazy week in our house & not much cooking going on.

    Tonight we are having my husband's favorite meal... hot dogs & mac n cheese. He is still a kid at heart :-) I'll have fresh carrots, cucumbers, strawberries & grapes instead of mac n cheese.

    Tuesday night we are taking our exchange student to the rodeo so she can have a true Southern experience. We will buy food from the concession stand there so she gets the full experience.

    Wednesday night we are having beef stir fry. I cooked it on Saturday while I was doing a lot of other cooking so it just has to be reheated. Flank steak on clearance at FL, broccoli, cauliflower, carrots, snap peas, & water chestnuts on sale at Kroger this week. It'll be served with rice & fresh fruit.

    Friday is undecided. We will be cooking 150 brownies & rice crispy treats that night for a fundraiser on Saturday so whatever we feel like making during that.

    Saturday we will be at the fundraiser all day so we'll eat lunch and supper there.

    Tonight is leftover pulled pork from Saturday. Going to grill up some yellow squash & zucchini to go alongside. Brownies for dessert.

    I'm so pleased with how it turned out! Seriously, no one knew it was gluten free until they saw my mom start to eat it. It's restored my confidence in trying gluten free baking :-)

    meredith88 what- a wonderful Mother's Day gift for you mom!! I bet she was thrilled. If you have the link to the GF dessert, please share. I have a good friend who is GF and I bet she would love it. And I bet the chicken with corn flakes was delicious. I have topped many casseroles with buttery corn flakes and it tastes great.

    I'm way behind and haven't written the menu for this week yet. However, I will post last night's meal. For Mother's Day my gift was to plan, shop for, and cook supper for all 13 people that went to my mom's house for dinner so she wouldn't have to do anything. My mom developed a severe gluten allergy about 3.5 years ago so we made her a couple of the foods that she misses the most from her "previous life" as she calls it. We made "oven fried" chicken using crushed corn flakes which turned out really well. We also made a summer vegetable tian and her favorite fruit salad along with a caesar salad. For dessert I made a gluten free strawberry shortcake with strawberries picked on Saturday. It was so moist no one could tell it was gluten free! It's the first gluten free dessert my mom has had that she actually liked! And strawberry shortcake is her favorite! Overall, it was a delicious meal with everyone together!

    Monday: left over baked pork chops, salad, garlic bread
    Tuesday: chicken fajitas(made in crockpot) with Spanish rice on the side
    Wednesday: Ranch cheeseburgers with tater tots
    Thursday: sandwich and chips
    Friday: fend for self... freezer meal night
