Chicken and cheese enchiladas

What's on your menu for the week?

This week, we'll be eating:

Monday: London broil (thinly sliced) on a big salad with garlic balsamic vinaigrette dressing (leftover London broil from Sunday night), side of potatoes (cooked in the slow cooker with the meat in a delicious McCormick Grill Mates marinade sauce)

Salmon burgers served on rolls with lettuce, tomato and provolone slices, side of roasted asparagus

Creamy garlic tofu on a bed of sauteed spinach and mushrooms, roasted cubed sweet potatoes

Baked cheese ravioli, garlic bread, sauteed zucchini,mushrooms and onions

Chicken and cheese enchiladas, Steamfresh buffalo cauliflower, corn

    Tonight we had the leftover London broil on a salad. Delicious!

    No real meal plan this week. Tonight is gourmet buffet including Bojangles chicken, meatloaf, and pot roast. Peas, mashed potatoes and a biscuit are the sides already prepared. Plus I have the making for a side salad.

    Other options for the week may be:
    Grilled chicken and/or chicken quesadillas
    Salisbury steak
    Pork chops
    Baked Ziti

    Tonight and tomorrow, stuffed jumbo shells, salad and bread sticks. The shells are stuffed with ground turkey and turkey Italian sausage, diced onions, mozzarella and parmesan cheese and an beaten egg. Ingredients are mixed together than stuffed in shells, top with pasta sauce and mozzarella cheese cover and bake at 350 degrees for 45 minutes or until cheese is melted. I use the entire box of jumbo shells it makes so much that I give my daughter and her family a pan to enjoy.This dish has been a hit in my house for many years.

    Monday & Tuesday - baked ziti

    Wednesday - Birthday freebie from Now's

    Thursday & Friday - Creamy crock pot chicken with carrots and peas

    Saturday - headed to myrtle beach for a day trip with DH and the girls to celebrate my birthday so breakfast at Shoneys, lunch maybe a seafood buffet and dinner will be at the pasta place that Ascherer recommended.....what was it called again Ascherer?

    Monday: hamburger helper, green beans, garlic toast
    Tuesday: BBQ Chicken, mash potatoes, corn, biscuits
    Wednesday: leftovers
    Thursday: Breakfast for dinner
    Friday: freezer meal... headed to beach about 4 am on Saturday so making Friday night as simple as possible
    Saturday: eating on the road... biscuit for Breakfast on the drive to the beach, packing lunch, dinner will be something quick and easy after riding home from the beach

    We are having a couple friends over for dinner tonight and are repeating our menu from last Monday to make it east on us ;-) So we are having bacon wrapped meatloaf, mashed potatoes, and roasted green beans with red peppers. For dessert we are having strawberry shortcake using the HT strawberries and the last of a pound cake from the freezer.

    Tuesday night we are having fajitas with steak, peppers, onions, and mushrooms. Rice, beans, and salads to go with them.

    Wednesday night we are having roasted chicken with mashed potatoes and some sort of green vegetable.

    And that's as far as I've gotten on our menu for the week so we'll see what happens the second half of the week :-)
