Sauteed shrimp on salad

What's on your menu for the week?

This week, we'll be eating:

Meatless Monday: Cheese, mushroom and spinach quesadillas (using the .99 flour tortillas on sale at Harris Teeter through 4/19 and the B2G3F shredded cheese from HT last week)

Baked chicken, steamed broccoli, rice

Creamy penne pasta with spinach and parmesan cheese (using Barilla Pronto pasta on sale for .68 after sale and coupon at HT through 4/19), garlic bread

Sauteed lemon pepper shrimp on romaine with tomatoes, cucumbers, onions, croutons, sunflower seeds, balsamic vinaigrette dressing

    Tonight is a chef salad
    Tuesday - Roast in the crock pot with veggies and a side salad
    Wednesday - Meatloaf with sweet potatoes and a side salad
    Thursday - Grilled chicken with green beans and a side salad
    Friday - No clue

    Meredith, your tian sounds wonderful. My DW won't eat squash in any form, and sometimes it's just too much trouble to make a dish only I will eat.

    I made spaghetti last night with salad and garlic bread. Tonight I'm using some of the leftover pasta sauce and making pizza with a Caesar salad and ice cream for dessert. Tomorrow will be baked chicken with veggies (depending on whether DH has a class or not). Wednesday will be smoked sausage with onions and peppers and buttered noodles with parsley. That's as far as I've planned to date.

    JDouglas, I made my tian with squash, zucchini and tomatoes. I left out the potatoes since we were already having mashed potatoes with our meal. It tasted even better than I had hoped which is awesome since I often run out of ideas for summer squash. I topped it with the 6 cheese Italian blend from HT.

    Trichardson, you and I are kindred spirits. I love my burger buns toasted and buttered.

    Meredith, my Mom used to make a veggie tian. It was so good! I think she used tomatoes, potatoes, and zucchini.

    Raesmom, I think I remember reading somewhere that flaxseed needs to be ground up for it to be of nutritional value. Do you have a food processor you can grind it in? Then just add to breadcrumbs? M&C AND Krispy Kreme AND brownies? Oh my! I may be inviting myself over a few times this week. :)

    Lindabates, your "Fend for Self" is always my favorite of the week. Thanks for the smile.

    Last night I grilled some extra chicken breasts and broccoli, so tonight I will add them to a Caesar salad with some rice from Chinese takeout last week.

    Tuesday: leftovers from weekend
    Wednesday: crockpot Spaghetti, salad, garlic bread sticks
    Thursday: Soup and sandwiches
    Friday: fend for self

    Coupon4me-flaxseed and breadcrumbs? How? Do you sprinkle flaxseed in the breadcrumbs and then coat the chicken with it? How long do you bake it? I only put my flaxseed in my smoothies but i would love to incorporate it elsewhere. Thanks

    I pulled out chicken tenders and I'm thinking of chicken spaghetti today and tomorrow, bbq pork chops 28th Mac and cheese and veggies Wednesday and Thursday. Friday TBD.....

    Dessert will be the rest of the krispy kreme donuts and brownies throughout the week.

    Last night we had my family over for dinner. We made BBQ chicken legs on the grill (Aldi sale last Wednesday). Sides of mashed potatoes (HT EVIC this weekend), fresh cantaloupe (HT sale this week), and a new recipe... summer vegetable tian. I'd never made tian before but it was delicious and got devoured!

    Tonight we're having a couple friends over for dinner. We are having bacon wrapped meatloaf (clearance at HT for $2) with mashed potatoes, roasted green beans (Kroger sale from last week), and fresh cantaloupe. My husband's been craving cake for weeks now so I expect a chocolate cake will also make an appearance on the menu :-)

    Tomorrow night we are having fajitas with steak on clearance at FL, peppers marked down at HT, mushrooms marked down at Kroger, and onions from Aldi. The fajita seasoning was free from HT SD and tortillas are always on hand.

    Wednesday is shrimp alfredo using free pasta from a past HT SD and a jar of sauce that was given to us. Leftover tian on the side.

    Since it is beautiful outside, I think I am going for a burger with grilled onions and garlic. Toast my bun with a little butter, and maybe some fries.
