Sauteed vegetables

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On our menu this week, you will find:

Monday: Chuck roast in slow cooker with onions, mushrooms and French onion soup. Sides of egg noodles and cucumber/tomato salad. The meat was marked down at Harris Teeter on Monday for $7.79 for a 1.89 lb roast and it was delicious after 7.5 hours on low in the slow cooker.

Tuesday: Sesame ginger tofu, sauteed squash, peppers and onions, corn on the cob, leftover pasta (Nasoya Tofu from Harris Teeter during Super Doubles with $1/1 coupon = total cost $1 for the 2 packages I'll use for dinner)

Wednesday: Taco bar with choices including chicken, shredded cheese, tomatoes, lettuce, onion, sour cream, salsa, avocados, flour tortillas and corn taco shells. Sides of rice and watermelon.

Thursday: Breakfast casserole with turkey bacon, cheese, sauteed veggies and seasoned croutons. Side of fruit salad.

Friday: Baked chicken tenders, mashed potatoes, broccoli

    RFB - I'm the same way but DH is not. I prefer to eat at least 4 hours before on going to sleep.

    Ascherer- that's great that you're getting on a schedule. And I know what you mean on the late night meals. I learned through trial and error that I do much better if I don't eat anything after 6pm!

    RFB - Thanks for the complement. Now that I am working from home more and DH is working more regular hours, I want to get us on something of a schedule. Planning dinner around when he will get home should really help with that. Plus we both need to drop some weight. So these late night dinners of grabbing something at a bar have got to stop.

    We ended up switching up dinner and defrosting a steak for our salads since I used all the chicken for my lunch! Wanted to share the recipe since it was so delicious. I added diced red onion instead of the dried onion and used some new cra@kers from Van's that I found today at HT called The Perfect 10 (6 grains, 4 seeds, gluten free) to use the salad as a dip. I had a $1.50/2 Van's products that doubled, and was very glad to have found them... so delicious!

    Granoftwenty- those chimichangas sound so yummy. Thanks for sharing the recipe.

    Ascherer- wow, what an awesome menu for the week.

    Baked chimichangas (usually chimicangas are fried but we like them baked)
    - choice of shredded beef or chicken ,fresh corn , beans and lots of cheese with choice of toppings including lettuce, tomatoes ,sour cream
    ( pretty much an enchilada without the sauce -the little ones like saying chimichangas so that's what we call them plus they are a little smaller better for little eaters)

    Last nights meatloaf got moved to tonight. We went out to dinner to celebrate DH first pay check since Thanksgiving.

    Tuesday - meatloaf (hamburger and ground pork), mashed potatoes, and butter beans.
    Wednesday - shepherds pie with hamburger, peas, corn, mushrooms, cream of mushroom soup then topped off with tater tots. (I may cheat and use leftover meatloaf.)
    Thursday - Homemade chicken enchiladas with lettuce and tomatoes on top.
    Friday - Chicken salad with grapes and toasted almonds.

    At some point we are going to have the gourmet buffet unless DH is good about taking his lunch or coming home for lunch.

    I'm hoping the storms hold off so I can grill some chicken. Served with fresh green beans and either rice or potatoes.

    What? No mushrooms in the veggie mix? They look delicious. If you want to gild the lily, lightly toast some sesame seeds in a dry frying pan and sprinkle them on top before serving. Yummy.

    I have no clue what we're having or who might be joining us for dinner tonight. Last night was Chuckles candy -- who remembers those? I know tomorrow night DW and I will be having a steak on the grill with salad and garlic bread. I am SOOOOOOOOO looking forward to it! :)
