Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On the menu at my (kids-are-still-out-of-school-while-I-try-to-work-from-home) house this week, you will find:
Monday: As you can see in the photo above, Monday night we had chicken breast sliders with provolone cheese, fresh local tomatoes, spinach and light mayo on Sister Shubert's Sweet Hawaiian rolls with sides of fresh corn (picked Monday morning!) and watermelon from the Farmer's Marker in Raleigh. And seriously, doesn't chicken "sliders" sound so much cooler than chicken "sandwich"?! ha ha
Tuesday: Garlic shrimp, broccoli and rice with sides of rolls and fruit salad (peaches, watermelon and blueberries)
Wednesday: Beef and mushroom stroganoff (using slow cooker London broil from HT on sale BOGO recently) served on egg noodles. Side of sauteed zucchini and yellow squash with onions (local squash from Farmer's Market for .99/lb). 
You can find the basic and easy Beef Stroganoff recipe I am using (with a few modifications) at Campbellskitchen.com.  Modifications include adding a bunch of McCormick's Montreal Steakhouse seasoning to the meat before pouring on the soup, using low sodium cream of mushroom soup, using only 1 onion (not 3 onions as the recipe calls for) and doubling the mushrooms to 16 oz, because you can NEVER have too many mushrooms. :-)
Thursday: Breakfast for dinner! Quiche with turkey bacon, Swiss cheese and mushrooms (remember what I said about mushrooms above?), House Autry cheese biscuits (free at HT with coupon and sale recently), tomato and cucumber salad
Friday:  We are having a last hurrah before summer ends and I am taking the kids and some of their friends to Wet & Wild water park.  You will find me floating on the lazy river ALL DAY LONG. I am sure the kids will want to stay until we are kicked out, so we will not make it home for dinner. My psychic powers tell me fast food is on the menu - preferably subs and not grease.
