Chicken sliders with corn and watermelon

 

Check out our menu for the week...well most of the week. Some of the week I will be floating on a Lazy River and refusing to cook dinner.

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On the menu at my (kids-are-still-out-of-school-while-I-try-to-work-from-home) house this week, you will find:

Monday: As you can see in the photo above, Monday night we had chicken breast sliders with provolone cheese, fresh local tomatoes, spinach and light mayo on Sister Shubert's Sweet Hawaiian rolls with sides of fresh corn (picked Monday morning!) and watermelon from the Farmer's Marker in Raleigh. And seriously, doesn't chicken "sliders" sound so much cooler than chicken "sandwich"?! ha ha

Tuesday: Garlic shrimp, broccoli and rice with sides of rolls and fruit salad (peaches, watermelon and blueberries)

Wednesday: Beef and mushroom stroganoff (using slow cooker London broil from HT on sale BOGO recently) served on egg noodles. Side of sauteed zucchini and yellow squash with onions (local squash from Farmer's Market for .99/lb). 

You can find the basic and easy Beef Stroganoff recipe I am using (with a few modifications) at Campbellskitchen.com.  Modifications include adding a bunch of McCormick's Montreal Steakhouse seasoning to the meat before pouring on the soup, using low sodium cream of mushroom soup, using only 1 onion (not 3 onions as the recipe calls for) and doubling the mushrooms to 16 oz, because you can NEVER have too many mushrooms. :-)

Thursday: Breakfast for dinner! Quiche with turkey bacon, Swiss cheese and mushrooms (remember what I said about mushrooms above?), House Autry cheese biscuits (free at HT with coupon and sale recently), tomato and cucumber salad

Friday:  We are having a last hurrah before summer ends and I am taking the kids and some of their friends to Wet & Wild water park.  You will find me floating on the lazy river ALL DAY LONG. I am sure the kids will want to stay until we are kicked out, so we will not make it home for dinner. My psychic powers tell me fast food is on the menu - preferably subs and not grease.

    It really is good, RFB! Once you finally get to it! lol

    And I was pleased that the sweet and sour chicken was so tasty. I like the Shrimp and pasta voila a lot, but alas, the 13 year old does not.....

    Nakabi and Faye- I've never had fresh coconut before... and wow, it is good.

    Faye- I got a few of those Bird's Eye Voila dinners also for my DH. He had the beef lo mein the other day and said it was pretty good! Great deal on those!

    Well, my youngest did not want the planned shrimp since she doesn't like seafood and the oldest is at band camp for the evening, so I let youngest pick dinner (as long as it was something we already had in the house). She picked Bird's Eye Voila sweet and sour chicken with rice and veggies. It was an HT e-Vic deal for me last week and only $1.47 each after coupon. It was actually very tasty and even had pineapple in it. Served it with sides of rolls, leftover corn on the cob from last night and watermelon.

    UNCW_Ash - thanks for the K&W tip but I am certain I will not be presentable after floating around all day in the water. I would probably scare people at the restaurant. lol

    I am not sure what is for dinner tonight. We have an extra (teenage) mouth to feed for the next few weeks, Hubby's little brother is in town.....HT SD's couldnt come at a better time......hoping for some good deals on snacks since i know have a real teenager plus my "teen" husband LOL

    I pulled out some chicken leg quarters so I may put that in the oven with some bbq sauce, rice and veggies.

    Faye, we always go to dinner at the K&W cafeteria that is located in the shopping center right outside the water park. Veggies are a must after a day of fun-plus a dilly plate is about the same price as a fast food meal and OH so much better!

    Tonight we're going to have the sesame noodles since I didn't quite get to them yesterday... I was too busy opening coconuts! Yes, I got out my big knife and went at it (yikes!) The first attempt was pretty comical!

    But today we'll be eating the fruit of my labor (literally!) since we're making raw coconut ice cream with fresh peaches as part of my class ... yum! :-)

    Nanny-that sounds yummy! Anything blackened sounds pretty good to me!
    My 4 year old started Pre-K today so we are taking him out to celebrate. He has picked our favourite Thai place for some green curry. Of course I will be using a coupon :)

    At the request of my DH we are having Blackened Shrimp with Mashed Sweet Potatoes and Andouille Cream. I have shrimp for previous HT sales and some other items from previous sales. Below is the link for the recipe (BTW...I always have to make double the cream sauce to make my family happy!)

    Anna - I actually used a shortcut and baked Perdue Simply Smart lightly breaded chicken cutlets. They were surprisingly delicious! They are on sale at HT through today for $5.99 and I had a $2 coupon making the 24 oz package $3.99 making it $2.66/lb. The sale does not continue according to the shelf tag so it was cheaper this week with coupon than starting tomorrow.

    It would be really good with some BBQ or Buffalo sauce on them. Good suggestion.
