Sauteed turkey sausage, peppers and onions

What's on your menu tonight?

Here's our menu for the week:

Sauteed smoked turkey sausage, peppers and onions on saffron rice (Butterball turkey sausage is $2.97 through 2/21 and there is a .55/1 coupon from 1/8 SS)

Homemade pizza with baby bella mushrooms, grilled chicken, alfredo sauce, mozzarella and parm. Served with a side salad. (Baby bellas are on sale at Aldi for .79 for an 8 oz package through 2/21)

Veggie burgers on wheat buns, baked sweet potatoes, green beans (Green beans are on sale at Aldi for .99/lb through 2/21)

Baked cheese ravioli, garlic bread, steamed broccoli

    Hey WALKERWEST! I decided to do a taco bar with pintos and brown rice. I cooked 2 pounds of pintos and brown rice in my electric pressure cooker to save time then I added 2 large cans of chopped tomatoes, 3 small cans of rotel (Walmart brand-it's cheaper by 50 cents), a bottle of GOYA cilantro seasonings and mixed it all together. On the bar I had all the fixings with chips and homemade salsa which I found on Pinterest. They ate it all up!!! I used all my savings apps to off set the prices a little.

    I have been using the meal plans from The 60 Minute Lunch Break. I really enjoyed the videos they have. The videos are free and it looks like their paid service is really cheap.

    ATURNER - what did you decide for the Reality Ctr lunch? I have the same problem when I help out with youth dinner at church once/month. It's hard to pick something most kids will eat---that's inexpensive. We lean heavily on rotisserie chickens from Costco, making them into soup. Have done chicken & rice and also chicken pastry. Good luck!

    Wow! That pic looks yummy- putting idea on next week menus. This week I have scheduled 1. honey-soy baked chicken legs with mashed sweet potatoes and green beans. 2. Enchiladas using leftover taco meat and beans from this past weekend with a salad. 3. Mandarin orange-spinach-chicken salad. 4. Creamy garlic spaghetti squash casserole ( it has broccoli in it.) 5. Thinking a hamburger steak type meal. Still have no clue what to make for the 50 plus kids at Reality Center on Thursday for lunch...

    Chicken breast cooked with one of the Wishbone EVOO dressings in my Instant Pot with rice and green beans.

    Tue: Tacos
    Wed: beef tips and rice
    Rest of the week we are starting to move so probably something very easy.

    Thanks Faye - it was fun but wouldn't want to host all the time! We are having Tennessee meatloaf (BBQ instead of ketchup), leftover French fries for kiddos and tomato pie for hubby and I and everyone gets green beans!!
