Here's our menu for the week:

Meatless Monday: Homemade veggie soup, spinach salad

Cajun Shrimp Fettuccine, sauteed zucchini and onions, rolls,

Baked chicken, roasted vegetables, saffron rice

Mushroom, spinach and cheese omelets, turkey bacon, fruit salad

Spaghetti with Boca veggie crumbles in the Marinara sauce, garlic bread, salad

    Coupon4me, leftover ham freezes beautifully, and defrosts pretty fast. I enjoy ham in soup, especially corn chowder, pea soup, and lentil soup, so when I have leftovers, I cut it into cubes and freeze it in portions.

    Tonight was dinner out -- fish and chips in Apex -- after a particularly difficult doctor's appointment for my DW. I'm sure you'll be hearing more about it in the days and weeks to come.

    Tonight we are having rotisserie chicken from Earth Fare with sides of steamed broccoli, rolls and mashed potatoes. Chicken enchiladas tomorrow with green salad and rice, beef stroganoff, biscuits and carrots on Wednesday, homemade veggie pizzas Thursday and salmon with baked potatoes and broccoli/cauliflower.     Tonight will be chili (or leftover pizza depends how I feel when I walk through the door lol)

    Tues - rice and beans and pork chops (missing home a bit)

    Wed - bbq chicken sandwiches from the slow cooker

    Thurs - maybe tacos or pasta

    Friday - baked chicken with Mac and cheese and veggies

    And of course cake leftover from the party and the first birthday this past weekend :)

    I am basically going from what I didn't cook on the past two weeks menu's. I will be adding one dish-chile rellenos casserole that I will be making for the kids at Reality Center for lunch Thursday and bring extra home. Plus we celebrated Chinese New Year so leftovers from that meal will be made into a one pot meal.

    Last night I made a ham with roasted butternut squash and creamed spinach - I'll have to think of some other ways to use that ham this week...sounds like a familiar story to someone else on the blog last week :).
    Tonight will be an Indian dish - butter chicken with basmati rice and peas.

    Tonight I'm thinking ribeyes with baked potatoes and salad. Tomorrow night may be tacos...it has been awhile since I've made those. Soup may also be on the menu this week. I haven't made any butternut squash soup yet this winter. Thinking that and grilled cheese on some nice thick multigrain bread :) Thanks for all the ideas and hope everyone stays warm !

    Ascherer & Faye - thanks for the kind words regarding my hubby. He still has a week or so of antibiotics left. If he's not better after taking the antibiotics he'll go back to the doctor. Thanks for caring!

    BarbieDoll - It is an easy recipe. Take cooked chicken and dice or sherd. Add sliced seedless grapes and toasted almond slivers. Combine mayo and sour cream equally with the chicken mix to make the desired consistence. Add salt and pepper to taste. Other seasoning can be added. Other veggie like celery or fruits like diced apples can be used. I normally season or marinate the chicken before cooking and adjust the seasoning after mixing everything. Momma likes to use a rotisserie chicken. I use this recipe after Thanksgiving to get rid of all the turkey pieces/parts.

    I do hope your DH feels better soon. He has been sick for awhile now and may need to go back to the Doc if he is not better within a few days.

    My sweet hubby is still under the weather with Bronchitis so I'm on my own again. Most likely it will be leftover spaghetti or perhaps a microwave dinner. Ascherer, I'd love to have your recipe for chicken salad. LindaBates, your loaded baked potato bar is a great idea!
