Here's our menu for the week:

Meatless Monday: Creamy garlic tofu with portabella mushrooms and spinach, bowtie pasta, roasted asparagus

Soup and sandwich night

Chicken tacos with all the toppings, corn

Homemade mac & cheese, steamed broccoli

Baked sweet potatoes and salads with leftover chicken from taco night

    Great menus everyone! Meredith, I am so sorry you guys are sick again. Didn't you just have a stomach bug?

    ybaverage2003 - Sorry I am not help on that personally but you can check the express lane at your local HT online to see of they have what you are looking for. I usually use bouillon cubes (or homemade stock if I have any in the freezer).

    aturner25 - I agree with jdouglas about eating from the pantry - very frugal! And I adore mushrooms so your cream of mushroom soup sounds wonderful.

    Raesmom, I can't believe Baby Ziti is already a year old. Wow.

    DW was under the weather yesterday, so we held off on the chicken and dumplings. That's what we're having for dinner tonight. I would really like to get some cod for Tuesday while it's still on sale at HT. If we do, I'll coat it in mustard/mayo, breadcrumbs, and bake it. Oven fries with malt vinegar, and roasted asparagus that is almost use or lose. The rest of the week is TBD depending on the ridiculous number of doctor appointments we have and how DW is feeling.

    It's all about what I have here in pantry, fridge and freezer this week!! Tonight: leftovers brought home from date night last Sat. Tuesday: Veggie stir-fry. Wednesday: Homemade bean and bacon soup with blueberry corn muffins (Jiffy mix). Thursday: Maple glazed skillet chicken breast with sweet potato hash, green bean salad. Friday: Steak fajita with salad and fixings. Yesterday I made soups I can eat off for my lunches since hubby takes leftovers to work. I made homemade cream of mushroom from the big bag of mushrooms I bought at HT for 79 cents, and potato-veggie, which I can eat as a broth soup or add ham and corn in for a chowder. Made a lot of that and put some in the freezer for later use.

    Mon & Tues- Korean Beef Bowl w/Rice and Broccoli
    Wed & Thurs- Roast Pork Tenderloin, Mashed Potatoes and Peas
    Fri & Sat- Honey Dijon Crock Pot Chicken, Corn Casserole, Green Beans
    Sun- something simple like pizza or mac & cheese :)

    I have no clue what's for dinner tonight. My husband was sick all weekend and now that he feels better I've caught his stomach bug. At some point this week we are having lasagna with side salads and then another day we'll have meatloaf with mashed potatoes and roasted green beans. I'll figure out which day is which once I feel better tomorrow or Wednesday :-)

    Meatloaf, roasted potatoes and roasted asparagus for dinner tonight. Also bought fixings for homemade chicken soup, which will probably get started tomorrow night.
    On a side note, does anyone else get frustrated when they can't find ingredients at the local stores ? I wanted chicken STOCK, not broth, to make my soup. LF only had broth (in every flavor) :( Seems like a simple thing, but results are so different. Not the first time I have had an issue and don't always have time to go to multiple stores for what I need.

    Monday-leftover meatballs and sauce

    Tuesday-pork chops dressing and green beans

    Wednesday-baked bbq chicken rice and veggies

    Thursday-some sort of pasta (again)

    Friday-maybe gourmet buffet......

    Monday: fish, shrimp,baked potato
    Tuesday: Home made Chicken Pot pie
    Wednesday: pizza
    Thursday: Soup and sandwich
    Friday: grilled pork chops, corn, Mac n cheese
    Saturday: my little girl turns 3 so hotdogs, burgers, chips and cupcakes for lunch- party with family.
    Saturday dinner: tacos with all the fixings

    My menu at this point consists only of a pot of coffee. ;)
