Weekly meal plan and Monday meals

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here's our meal plan for the week:

Monday: Baked ziti, steamed broccoli, garlic bread and clementine slices

Tuesday: Teriyaki sesame tofu, stir fry veggies (zucchini, mushrooms and onions), brown rice

Wednesday: BBQ beef sliders using BOGO London Broil from HT last week cooked in the slow cooker and Sister Shubert rolls bought on sale with coupon a while ago. Sides of pasta salad and tomato and cucumber salad.

Thursday: Chicken salad sandwiches, sweet potato fries, green salad

Friday: Homemade veggie pizza using the pizza dough balls on sale at HT this week through Tuesday for $1 (I bought 3 yesterday and put them in the freezer).

    TWOBOYSANDADOG...my recipe was tagged on FB and it looked easy so I gave it a try-yummy!

    4 boneless skinless chicken breasts (approx 1 lb). I used HT from the meat counter, cut 2 large ones in half length ways and then into slices (about 3-4 "tender size") .
    2 cans cream of chicken soup (I used the healthy choice option)
    1 small onion sliced (leave as large or slice as small as you like)
    Add all of the above to the slow cooker, add enough water to cover. I also added salt and pepper. Cook on high 5-6 hours.

    Then add 10 canned biscuits (Jr Grands were recommended but I used HT brand), torn and rolled in flour. Add to the slow cooker and continue to cook on high 30 min. The biscuits will get to about a dumpling consistency and doneness.

    Had Chicken and macaroni and salad tonight. Sometime this week going to have stuffed peppers and have chicen teriyaki in crockpot cooking and of course leftovers.

    UNCW_Ash - great job on doing the meal plan! We love leftovers here and many of our lunches are leftovers from the night before.

    For the first time ever I have made a month long meal plan. Of course it will change as we find out about new activites, but my plan is to make the most of leftovers and NOT eat out as much! I am determined!

    M: Shrimp Scampi (HT $5.99/lb shrimp) with salad.
    T: Leftovers of either scampi or crock pot chicken and dumplings made Sun.
    W: Spaghetti (sale 93% lean beef frozen a while back), more cheap pasta thanks to HT and salad
    Th: Leftovers again (spaghetti always good for two meals, plus we have plans so it's a quick dinner)
    F: Me and kids Out of town at a retreat with our church (hubby on his own, aw!)

    I am preparing chicken with vegetables stir fry, rice, cucumber salad, and pineapple. Hardest part of all is the prep work.....slicing and dicing.....tee Hee Hee.

    I slow cooked a whole chicken yesterday so chicken will be the base for a couple of our meals this week. Tonight I think we will eat just plain chicken with a side salad, brocolli and corn.

    I read Faye's menu and the first thing I thought was **Raesmom - Baked Ziti Alert**! LOL Raesmom, have a wonderful trip home with lots of baked ziti! :) Safe travels back too with your extra travelers.

    Everyone's menus for tonight sound so good. WFR, cool way to make M&C. I never would have thought to use a rice cooker.

    Nakabi, I love eggplant parm almost as much as M&C. How do you make yours?

    Oh you are killing me Faye!! LOL I will most certainly be making baked ziti on Wednesday (2 sisters already called in the request) at my moms house and again on Saturday at my MIL's house. My MIL is having a cook out for us on Saturday and at my moms house the doors are ALWAYS open for any of my relatives to come through at all times lol so it is going to be a fun week!!!

    Dinner for us today is left overs/clean out the fridge buffett. There is some rice and pork chops, chili, cheesy potatoes, bbq ribs and baked beans in there so im sure we can find something to eat.
