Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On the menu this week we will be having:

Monday: Chicken Taco Bowls (in the Old El Paso tortilla bowls) with salsa chicken from the slow cooker using Lowes Foods $1.99/lb Sanderson Farm chicken on sale this week, cheese, rice, corn, tomatoes, lettuce, avocado slices and a dollop of sour cream.  Pear slices on the side.

Tuesday: Teriyaki tofu and stir fry veggies on noodles

Wednesday: Philly cheese steak sandwiches (sine we did not end up having them last week), salad

Thursday: Tilapia, rolls, salad

Friday:  Spaghetti, steamed broccoli, garlic bread

    jdouglas- I have a grill pan that I bought at Target (it's from Giada and works fantastic). I just drizzle in some oil and once hot, add in the whole romaine. I grill for about 3 minutes, and turn once or twice to get a bit of char (not much) on each side. Super simple!

    Last night I cooked a pork lion in the crockpot. We had it with mashed potatoes and corn. Today it will make an appearance as chilantro lime tacos with rice.

    RFB - yum! How long do the grill the romaine for? I imagine it's on and off pretty fast??

    jdouglas- thanks! I'm grilling romaine too, so it's a cross between a cobb and grilled Caesar salad :-)

    What fun Cinco de Mayo menus!

    RFB, I love the idea of a grilled shrimp Cobb salad. I will definitely have to try it! When we moved out here to Never-Never Land amongst the goat farms, and discovered (after the fact) that the nearest HT was at least 45 minutes away, we learned really fast how not to shop very often! We had been very spoiled by having multiple good grocery stores less than 5 minutes away, and WF and TJ only about 15 minutes away. We actually did pretty well saving more on groceries and coming up with some creative pantry/freezer meals.

    I think we are having marinated grilled chicken (LF) and the leftover potato salad and green bean/tomato/corn salad from last night.

    Either Baked Ziti or spaghetti, depends on if i remember to get sour cream on my way home today lol

    Chuck roast-sale last week at CC's-in crockpot with Campbell's Cooking Sauce Korean BBQ (clearance cart at ht several weeks back).

    I always make a weekly meal plan, but this week my goal is to shop just twice (I typically go every day... yes, I actually love it, but need a break!) So here goes...

    Monday- Shrimp Grilled Cobb Salad with avocado, bacon, HB eggs and a Greek Yogurt Dressing with cilantro

    Tuesday- Pork Katsu with Rice and Crispy Garlic Green Beans

    Wednesday- Sweet Potato and Steak Hash mixed with Zucchini Noodles

    Thursday- Chicken Salad Stuffed Avocados on a bed of Spinach Salad

    Friday- Homemade Veggie Burgers with Spinach and Sweet Potatoes and Roasted Asparagus
