Chicken salad


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?


Here is our meal plan for the week:


Chicken salad sandwiches on croissants (using $1.99/lb chicken breast)

Knorr herb & garlic rice (.40 at HT with sale and doubled coupon)



Taco Tuesday! Chicken tacos, with chicken cooked in the slow cooker on Monday, Old El Paso flour tortilla bowls (free with previous sale/coupon combo), cheese, lettuce, tomatoes, black olives, salsa and sour cream

Creamed corn

Apple slices


Penne pasta with Alfredo sauce

Garlic bread



Al Fresco chicken sausages with sautéed onions, green peppers and mushrooms on a bun (sausages free at HT super doubles)

Side of pasta salad with veggies (pasta free recently with sale and coupon)

Tangerine slices


Homemade veggie soup – the temperature is only supposed to get up to 58 on Friday so warm soup sounds about right

Crusty bread

    jdouglas- I think that flat leaf parsley would be a perfect substitute. I hope you try it, she did a fantastic job of making a pretty complicated dish user-friendly :-) And my DH, who is pretty "meat and potatoes" really liked it too, which says a lot!

    I was glad to share the mac & cheese recipe, especially to such a great reponse! Faye, feel free to add to the recipe database if you like.

    I am already cooking dinner menu #2, after menu #1 involving some funky fish my brother caught a while back was requested, cooked, tasted, and vetoed. Sigh. Spaghetti and sausage it is.

    Alwaysab, your soup sounds delicious and just what I would like to have for dinner! Something nice and fresh.

    RFB, I looked at the chicken recipe and it looks really good! The flavor combo sounds so interesting and complex. Do you think it would survive the omission of cilantro? I'm in the "cilantro tastes like soap" camp. Can I sub some flat leaf parsley?

    jdouglas... oh yum, love key lime pie!!! And awesome mac & cheese recipe :-) Also, your parents sound like me 4 months ago... I can't believe how much we used to spend before couponing!

    And p.s. the Chicken Biryani is seriously one of the best dishes I've tried in a while. Next time I'd reduce the red pepper flakes to 1/4 tsp, though... I'm a spice wimp, and mouth is on fire with 1/2 tsp.! Here is the recipe in case any of you would like it.

    JDouglas - your mac & cheese sounds out of this world! YUM. I really want to try those chicken sausages that everyone is having for dinner this week.

    JDouglas’ homemade mac & cheese: 1 lb penne, ziti, or elbow macaroni cooked 5-6 minutes MAX and drained, 1 lb Cabot seriously sharp cheddar shredded, 3 ½ cups milk (at least 2%), 1 tablespoon Colman dry mustard or Dijon, 2 teaspoons Worcestershire, 1-2 shakes of Tabasco (opt.), 3 tablespoons EACH butter and flour.

    In a 4 + cup pyrex measuring cup, melt butter. Add flour and mustard, using a whisk, stir till smooth. Add ½ cup milk, stir till smooth. Add 2 more cups milk, stir till smooth. Microwave 2 minutes. Remove and stir. Microwave 2 more minutes. Remove, stir, add in cheese, Worcestershire, Tabasco, stir to melt cheese. It will be very thick. Cheese may not be fully melted. Pour cheese sauce into a large, shallow *BROILER-SAFE* casserole dish. Stir in remaining milk. Gently stir in pasta until combined. Put in oven, broil on high until desired level of brown on top. I like it kind of charred, but my DW tells me I’m a little strange! ;) Enjoy!

    RFB, when you go to Carlie C for the limes, would you buy some extra and make me a key lime pie please!! ;)

    Dinner tonight is a mystery so far. Even with spending $800/month on groceries, the pantry and freezer here at my folks' house are nearly empty. I did see some Italian sausage, so I may see if I can scare up the rest of what I need for penne with sausage in sauce.

    Thanks Faye! I've never been there, and found one not far from me. I think I'll check it out! :-)

    Oh, and for those who bought the sausage... I ADORE the apple variety. It's really great cut into small coins, drizzle w/olive oil and roast on a rimmed cookie sheet (flip 1/2 way during cooking). I often add in cut up sweet potatoes, onions, cut up leeks, even cranberries (with sugar) to make a delicious roast hash!
