Stuffed Green Peppers

Here's the place to share your meal ideas for the evening or the week, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

For dinners this week we are having:

Meatless Monday: Krispy Kreme doughnuts.....

You know I am kidding. But there is a good deal on them today if you are so inclined. With my lack of will power, I know better than to bring those fabulous fat bombs home.

We are actually having Spinach, mushroom & cheese quesadillas with salsa and sour cream. Side of homemade veggie soup I made this weekend.

Stuffed green peppers with Boca veggie crumbles as the protein, rice, tomatoes, cheese, sauteed mushrooms and onions and a pasta sauce. Side of crescent rolls.

Spinach salad with grilled chicken and various veggies. Side of leftover crescent rolls. (Organic Earthbound Farms spinach is BOGO at Harris Teeter through 12/13)

Baked Tilapia, baked sweet potatoes, steamed broccoli

Friday: Pizza night! Alfredo pizzas with black olives, mushrooms, and green peppers. Side of steamed carrots.

    Thanks to everyone for your kind words. We are both feeling better today. Hopefully we will be 100% tomorrow. DH is having homemade chicken and noodle soup with lots of veggies in it. I may just do a pack of nabs because I don't like the soup.

    Raesmom1612 - My note comes with two disclaimers: I'm not a Brunswick stew connoisseur and what I've had was scratch made at individual cook outs. Most Smithfield BBQs offer it as a side. Also if you're up for a bit of a drive, I've heard years of banter among eastern NC friends that the best Brunswick Stew in NC is at one of two locations: Bill's Barbecue (Wilson) or Gardner's (Rocky Mount). I understand that Bill's is back in business after Hurricane Matthew and offers several sizes (with a quart serving about 4 people for approximately $4.95). Don't have pricing for Gardner's but anticipate similar cost.

    No menu for us yet this week. I woke up sick this morning and had to take a half day off work. I've been sipping water all day and am starting to get hungry so I'm hoping to get to eat supper :-) Since I'm sick supper will almost certainly be fast food. For some truly strange reason that I will never understand, the only food that I can eat when I'm nauseous is fried fast food. McDonald's is best but Wendy's and Bojangles (without the seasoning) usually do the trick too. So we'll be headed to one of those tonight to get dinner and then I hope to be in bed by 7pm ;-) Hey, a girl can dream, right?

    All the menus sound so good!! ..and Faye, your beautiful stuffed peppers!! Adding some to our week's menu.

    After pleasantly being surprised with weekend guests, I'm playing catching up ... so a few one-dish meals with less to clean up. Tonight: spanakopita, honey-drizzled cardamom roasted stone fruits with pecans, and snickerdoodles (few left from weekend double-batch).
    Tues: Cheesy potatoes/onion/broccoli/ham/casserole with sliced cantaloupe
    Wed: Green bell peppers stuffed with shrimp-cauliflower-carrots-quinoa-couscous, and fried apple pies
    Thurs: Steamed cabbage, potato galette, and walnut-citrus salad tossed in balsamic-minced sweet onion dressing
    Fri: Flounder scampi, wild & brown rice, braised carrots, and banana bread

More...
