If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here's our menu for the week:

Meatless Monday: Spinach, mushroom and cheese quesadillas with salsa and a side salad

Lemon chicken, kale and rice

Garlic shrimp on spinach salad, side of crescent rolls

Homemade veggie pizza with mushrooms, green peppers and black olives, side of steamed broccoli

Baked Tilapia, baked sweet potatoes, roasted asparagus (if on sale somewhere starting Wednesday)

    We are still trying to recover from our house full of company the last five days. We both took naps yesterday and we're still ragging today. Tonight we are having homemade calzones for dinner but we haven't planned any of the rest of the week yet. Maybe after another full night of sleep we can tackle the next four days :-)

    OBSERVANT your corned beef sounds delicious ! I knew some one who baked the BEST corned beef but sadly I never got the instructions . My grandmother fixed hers the same way as you - changing the water part way thru cooking and it was wonderful.
    Tonight : Ribeyes on the grill , baked potatoes and grilled veggies .
    I smell apple pie and saw ice cream ingredients earlier ....

    No idea what we are doing for the rest of the week but today will be goulash. I really wanted baked ziti but only had spaghetti noodles and elbow noodles. Maybe bbq ribs with baked beans biscuits and potato salad tomorrow and baked chicken with rice and veggies on Wednesday. If I can make it to the store (in sure I will) we will have taco soup Thursday and baked ziti Friday......who knew I had a menu after all lolololol

    Rae and I made brownies last night so those will serve as dessert for the rest of the week and we will be baking all day Friday to prepare for the cookie swap on Saturday!!!!!

    Heading to a family member's home tonight for a lasagna dinner (YAY- no dishes!)
    Tues. & Wed.- Korean Beef Bowl w/rice and some kind of veggies
    Thurs. & Fri.- Pork, Apricot and Red Onion Kebabs w/roasted potatoes and veggies
    Sat. & Sun.- Ground Turkey Parm Zucchini Boats

    Jdouglas- I was low on ideas this week too, so just went w/a few things on sale from HT :)

    I think tonight might be spaghetti with Italian sausage. We were going to have burgers on the grill last night with baked potatoes and something green, but the propane tank was empty and it was just to dark to see to hook up the full one. I think at this point, anything un-Thanksgiving-ish would be perfect ;)

    Observant, I'm with you on the brisket vs. corned beef. I'll take brisket any time. But if you add a good Kosher pastrami to the mix, I'm all in!

    What's everyone else doing for dinner this week? I could really use some ideas.

    Faye - The salt and fat are why I cook the corned beef a while then pour off the water - it does reduce both significantly .

    observant - I really like brisket as well. The corned beef version is just too salty for my taste.

    Monday: baked pork chops, Mac n cheese, green beans
    Tuesday: Breakfast for dinner
    Wednesday: chicken is all I have so far
    Thursday: burgers or hotdogs and fries
    Friday: not thought of yet

    Faye - Thank You ! I will be checking on the jerky since this is a large corned beef .Since DH loves it, I cook one once or twice a year at the most ( not buying one unless a good sale ! LOL)I would sometimes prefer just the brisket not "corned" .
