Roasted asparagus

What's on your menu tonight?

Here's our menu for the week:

Meatless Monday with Portabella mushroom ravioli with alfredo sauce and Parmesan, roasted asparagus (on sale at HT for $1.88/lb through 11/15). This was on the menu last week but we didn't end up having it so it's back again this week.

Soup & Sandwiches: Grilled cheese on rye, tomato soup and Caprese salad (using B1G2F mozzarella balls from HT through 11/15)

Scrambled eggs, turkey bacon, croissant rolls, fruit

Teriyaki tofu, stir fry veggies, egg rolls

London broil, egg noodles, salad

    Monday: pizza

    Restaurants of the week depends on how many days/ nights I spend at the hospital...sick family member.

    Dinner with the in-laws ended up being barbeque, mashed potatoes, sweet potato fries, mac n cheese, cole slaw, and baked beans. No cooking or cleaning for us :-)

    MG0526, hello! Nice to meet you. :) Chicken pot pie - yum!!

    Coupon4me, I love cooking a beef roast that way. So good. One of the things I love about salads like the one you made is you can put pretty much anything in it and it's delicious.

    Faye, I messed up when I made the pie crust. I made it all butter instead of 50/50 butter and shortening, and added way too much water because I was mixing it by hand to keep the butter chunks big. I recently saw a method of making pie crust in a stand mixer that sounded promising. I'm going to try that when I make our lemon meringue pie for Thanksgiving.

    I'm using my grocery stock this week.
    Sunday was beef stew in the crockpot
    Monday - potato soup in the crockpot
    Tuesday - Salisbury steak & mashed potatoes
    Wednesday - mini chicken pot pie's
    Thursday - date night with a bogo dinner coupon from my go play save before it expires on the 30th
    Friday - TBD something in the freezer either the Voila, Digiorno, or barber stuffed chicken. Whatever sounds good that day.

    jdouglas13 - got the portabello ravioli from Aldi last week in the Garner store in the sale freezer bin across from the bagged salads and yogurt. It was the last bag so not sure if they will be carrying it again.

    Bummer on the pie. :-( I bet with some ice cream it would be awesome! lol

    coupon4me - I need to do a veggie clean out as well from the fridge. I may do a mini version of that in addition to the asparagus tonight. Thanks for the idea.

    I did a pantry clean up this weekend and plan to continue tonight.
    Saturday I had high temperature Beef roast, sweet potatoes and Brussels sprouts.
    Sunday we had grilled chicken salads with every single leftover vegetable I could find. Corn, zucchini, green pepper, tomatoes and cheese.
    Tonight is bacon and tomato sandwiches with mayo.

    Meredith, your eggplant parm on Saturday sounds delicious! Sorry you're sick again. Guess 'tis the season.

    Faye, was that an invite to dinner tonight that I heard? j/k Where does one buy Portobello ravioli? I may steal your idea for dinner tonight. I just have cheese ravioli, but can whip up a quick alfredo sauce and add in some crispy prosciutto and asparagus.

    I finally made the apple pie and remembered why I don't make apple pie. ;) Not my best thing. I need to make something else for dessert to redeem myself.

    Oh no! I'm so sorry you are sick again! AT least you have a great menu with all the meals ready to go! I hope your hubby is recovering from the virus as well. Feel better soon!!

    Well I spent all last week trying to kick my virus and I felt great Saturday... until I caught a cold :-/ So I made myself go ahead and cook almost all the meals for the week last night so we will actually eat real, balanced meals this week instead of another week of freezer finds ;-) Bonus - we actually have our menu planned this week!

    Tonight - We are eating dinner with my in-laws. Since they are the ones who got me sick I don't mind being around them :-)

    Tuesday - Creamy chicken enchiladas with side salads and fresh fruit.

    Wednesday - Meatloaf with mashed potatoes and roasted brussel sprouts.

    Thursday - Brasilian which consists of rice, black beans and fried eggs with a side salad.

    Friday - Girls' Night with my best friend. I'm sure we'll end up eating pizza.

    Saturday - Eggplant Parmesan with side salads and fresh fruit.
