Chicken soft tacos

Here's the place to share your meal ideas for the evening or the week, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here's our menu for the week:

Monday: Creamy pasta bake with shredded chicken breast, sauteed mushrooms and green peppers and cheddar cheese. Sides of salad and French bread.

We had this for dinner Sunday night and there is just enough left over for dinner Monday night. I used a can of Progresso creamy mushroom soup, about 1/4 cup of milk and 2 big spoonfuls of light sour cream for the sauce as well as lots of pepper and garlic powder to season it. Topped with crushed garlic butter croutons and parmesan. Baked at 350 degrees for about 40 minutes uncovered.

Soup & Sandwich night with Trader Joe's organic creamy tomato soup as well as Swiss and veggie burger melts on rye bread

Crab cakes, pasta salad, steamed carrots

Teriyaki shrimp on rice with stir fry mushrooms, onions and green peppers

Chicken tacos with all the veggie and sauce fillings and choice of flour tortillas or taco shells. Side of corn and baked apples for dessert (bought the apples for .69/lb at the new Food Lion on Cleveland Road neat Clayton)

    JDouglas13 - Thank you so much! Btw - never thought of you as being a slouch - at all! Coffee is so delish that the power of suggestion sees me bee-line-ing back to the coffee pot for just a skosh more :) Can't having you sipping alone now can we?

    Faye- Thank you! And yes, my parents were shocked (and thrilled) when I got back from my first HT trip and spent $100 and saved $100 :) Here is the recipe. The slaw is really good with other recipes as well.     We did some cooking yesterday to get a jump start on our week. Not sure what order the meals will go in but we have 2 night's worth of scratch made chicken pot pie, homemade chili, and venison stew all done and in the fridge ready to be reheated. I'm betting tonight will be the pot pie. It was hard not to dig into it yesterday when it came out of the oven! Salads and fresh fruit to go with it.

    I'm not sure what is for dinner tonight. The hotel I am staying at feeds me every Monday, Tuesday, and Wednesday evenings. Tuesday night is normally grill night and Wednesday they have a local food truck come over. I just can't remember what Monday night is.

    JDouglas - I'm with you on the night owl thing. When I am at home and not working, I keep the same schedule you do. It drives my DH crazy.

    RaleighFoodBlogger - I bet it is quite a transition to double your meals. At least you get to incorporate some fabulous gourmet options! I just wish my food photos were half as good as yours! And Apple Kiwi Slaw sounds amazing. Have you posted your recipe link to that before? I don't recall seeing it.

    Em2s - so good to hear your family members are showing improvement. Big hugs right back atcha. :-)

    EM2S, so nice to see you and hear that things are improving for your loved ones.

    I'm still working on coffee, but I think dinner is homemade white pizza topped with prosciutto.

    FWIW, posting as often as I do about my morning coffee usually being more like lunch-time coffee, I just feel the need to say that I am a nocturnal creature, so my sleep time usually doesn't start until somewhere between 3 and 6 am. Just so y'all don't think I'm a total slouch. ;)

    Ybaverage2003- you're making me hungry!! :)

    And I'm still working out how to cook for 4 (it's only been the 2 of us for coming up on 25 years!) I've decided to cook once for 2 days, and if there is leftover meat after that, use it in a different way for the third. It's working nicely so far.

    Mon.- Chicken and Goat Cheese salads w/leftover rotisserie chicken from FM
    Tues. & Wed.- Ground Turkey Parmigiana Zucchini Boats with Roasted Asparagus
    Thurs. & Fri.- Roast Pork Tenderloin with Corn Casserole (Thanks Faye for the reminder!) and various veggies or salad
    Saturday- my Pork Tacos with Roasted Sweet Potatoes and Apple Kiwi Slaw
    Sunday- folks always stop by FM and pick stuff up after church... it's so funny, I feel like I'm living in a gourmet country Inn with all the "good" meats and cheeses and lots of sweets that they buy :) I'm trying to balance it out with my healthy (and frugal) weeknight lunches and dinners.

    Thank you so very much, Faye! Many were impacted far worse. Family health concerns (unrelated to the storm) for three members are showing much welcomed signs of improvement. Today, I'm at home and counting blessings! ... one of which is having pantry and cleaning supplies from couponing deals to share. :-) You and fellow Smart Shoppers have greatly increased my ability to share by making me aware of affordable, high quality products being offered by our local stores. A big hug to each of you!! I'm truly grateful!
