Here's our menu for the week:

Meatless Monday: Homemade veggie soup, rye bread and spinach salad

One pot cheesy Italian chicken and pasta using a recipe from theslowroasteditalian.com. I may also add some canned, drained corn and fresh sliced mushrooms (shocking, I know) to this recipe. Side of apple slices

Veggie pizza, roasted asparagus

Garlic shrimp on Caesar salad, crescent rolls

Baked chicken, roasted carrots, potatoes and onions, fruit (of some kind - depends on what is on sale later this week)

    ASCHERER - Go Cubs! I love Wrigley field. My hobby used to be travelling to visit MLB stadiums.
    Don't tell my Dad I'm not pulling for the Indians. He used to be the batboy for their minor league team here in Lexington, NC. I just feel the Cubs are long overdue and the billy goat curse needs to end!

    Faye, let me know how your recipe turns out. I've seen similar ones, but haven't tried it yet. Interesting concept. Did you find a good deal on sundried tomatoes? I love them.

    Ascherer, thanks for the reminder about the World Series. I will have to watch at least some of it for my Dad.

    Tonight is going to be a new recipe as well. Boneless pork chops with scalloped/au gratin potatoes all in one casserole. If it turns out well, I'll post the recipe later in the week. It's definitely a frugal dish. The pork chops are actually from a whole pork loin I bought super cheap a while back, cut into smaller roasts, and froze. Side will probably be roasted asparagus.

    Tonight we are having homemade lasagna with caesar salads and something else. I was planning grapes but we tasted our new bag of grapes last night and they are awful so we won't be eating those.

    Tomorrow night I have a work dinner and so does my husband so we will both be eating out, just at different places.

    Wednesday night we are having shrimp alfredo with side salads.

    Thursday night we are having popcorn shrimp and fries per request from my husband. I'll make some sort of roasted veggie to go with it.

    Friday night.... who knows? :-)

    We did left over chili yesterday.

    Boneless pork chops with sausage gravy , mashed potatoes, green beans and biscuits today

    Tues creamy chicken in the oven with rice and corn

    Wed spaghetti and meat sauce

    Thurs dominos pizza using a bogo coupon and a $15 gift card

    Fri ????

    ASHERER - GO CUBS! I'm a Tiger Fans since my hubby was from there, But since Tigers didn't make it this year, our next favorite team is Chicago, we we're there 2 years ago at Wrigley Field celebrating 100 years of Wrigley Field.

    Monday: chicken and Rice casserole, green beans, rolls
    Tuesday: ravioli casserole, side salad
    Wednesday: breakfast wraps
    Thursday: leftovers
    Friday: undecided

    Tonight will be chicken wings with homemade sweet & spicy BBQ sauce and roasted broccoli.

    Monday - Leftover shrimp from an almost free Red Lobster dinner (oop $1.75 plus tip for two dinners and drinks). Thanks Swagbucks! DH has a meeting.

    Tuesday - Freezer food or mac & cheese for me. DH has softball games at 7 and 8. And then softball ends for five/six months.

    Wednesday - Finger food at my Ladies meeting. DH is on his own or gourmet buffet.

    Thursday - Dinner out. We have a meeting with our financial advisor. Our retirement is taken care of - we just have to get there.

    Friday depends on this weeks sales.

    This is my plan and I hope to stick to it but the World Series starts on Tuesday. My DH has waited his entire life for the Chicago Cubs to go to the World Series. I just hope the Cubs do it before I leave for DC but I don't know if they can do it in four games.
