What's on your menu tonight?

After 31 hours without power this weekend, I am pleasantly surprised that most of the fridge and freezer food survived because I bought a bunch of big bags of ice. So thankfully I will not have to completely restock. Of course, that also means that the cost of the food just went up, but it would have been much more expensive to replace it completely.

Here's our menu for the week:

Meatless Monday: Ginger teriyaki tofu, broccoli, carrots, onions and mushrooms on rice

Chicken, cheese and spinach quesadillas, asparagus (on sale at Harris Teeter for $1.99/lb through Tuesday, 10/11), baked apples

Veggie soup and tuna melt sandwiches

Loaded baked potatoes and salad

Baked cheese ravioli (with green peppers, mushrooms and onions, marinara sauce, mozzarrella and parmesan cheese), garlic bread, salad

    And our power is back on at last along with our non-potable water. ;) While we did lose quite a bit of food, it wasn't the pricy items so I was very grateful.

    I'm thinking tonight might be burgers on the grill so we don't have to wash pots and pans.

    We've had cottage pie for the last two nights. Tonight I wanted ham, baked sweet potatoes, and corn for dinner. Had everything but the ham. Went to Krogers (southwest Durham) yesterday afternoon but their larders were bare. No meat, little dairy, and zilch on the ice cream. Don't know if they lost power and had to get rid of stuff, or if there was a run on the store prior to the hurricane and they couldn't get deliveries. I went into my freezer and pulled out some BBQ chicken which I will shred and serve on Kroger's version on Hawaiian sandwich slims with broccoli slaw and corn. That's as far as I've gotten today.

    BBQ pork loin roast in the Crockpot (marked down at Kroger yesterday) with potatoes and carrots. I'm not feeling well so I'm leaning toward chicken noodle soup.

    RFB, so sorry about your Mom. It's so hard when they get older and you don't live close by. I hope her injuries are not bad.

    Glad to here everyone is ok. We lost power twice on Saturday, but it has since been restored.

    Dinner tonight was going to be baked ziti or homemade meatballs and sauce (im craving pasta lol) we will see what Rae feels like helping me make since she was home from school today with daddy :)

    no idea what the rest of the week may hold, but I promise I will feed them

    Wow, I'm so sorry to hear about everyone's power loss. We live over restaurants/businesses and nothing went out in our development.

    This week is using everything up in the freezer/pantry/fridge! My mom took a fall on the stairs a few days ago so we've decided to move in 2 weeks instead of a few months. She's OK, but feel the sooner the better to get there to help out is best.

    Tonight is turkey tacos. And the rest of the week will be various uses of chicken and pork loin.

    Jdouglas - I really hope you get power back today!!!! What a pain! I look forward to being out of the boil water requirement so we can shower and wash dishes again. This thing is just dragging on and on.

    We've been without power since Saturday afternoon. I haven't opened either freezer and am hoping there will be some things salvageable! Dinner has been mostly cheese and crakers and bday cake. We did have a takeout pizza yesterday for lunch. :)
