Shrimp and fettuccini alfredo

What's on your menu for the week?

I am so happy to report that I am finally eating real food after a successful surgery last week. It's a lot more fun to make the meal plan when I can actually eat the meals. They still need to be relatively low fat, but it's great to be on the mend.

This week, we are having:

Shrimp and fettuccini alfredo with roasted carrots, asparagus, mushrooms and onions

Teriyaki tofu and broccoli with baked veggie egg rolls

Baked chicken with roasted sweet potatoes and salad

Chicken fajitas with sauteed onions and bell peppers (and toppings of salsa, cheese, and avocado) and a side of corn

Spinach and mushroom quiche, fruit salad

    Pork chops in crockpot w ranch gravy, green beans and biscuits
    Tuesday: chicken and mash potato casserole
    Wednesday : sandwiches and chips
    Thursday : freezer meals
    Friday: not sure yet

    Rae and I will be having leftover baked ziti tonight.

    Tuesday and Wednesday will be bbq baked chicken with Spanish rice, beans and corn.

    Thursday will be pork chops with mashed potatoes and something green.

    Friday is a toss up. The helicopter egg drop was cancelled at church yesterday bc of the rain so they are having an egg hunt at church with over 2000 eggs on Friday and DH gets home So if we don't go to church we will go out to eat.

    Ascherer, I feel your "ham" pain :P This week is leftovers. leftovers, leftovers. Had an asparagus & ham omelet already for breakfast. Leftovers include ham, lamb and the traditional Easter lasagna :) Happy Eating all !!

    M - Ham, deviled eggs, and steamed green beans
    T - Ham, onion, mushroom, asparagus, and cheese omelets
    W - End of the line ham casserole with a veggie
    TT - Chef's salad with diced eggs, ham and cheese (maybe asparagus if there is any left)
    F - Something that use to go moo because I have the feeling my DH is going to oink at me and say no more ham.

    I have almost 3 dozen eggs (uncooked) and didn't get my Easter ham. Yes I am buying one today while the prices are still good. Plus we are going back onto South Beach. I would like to have a week without any bread, pasta, rice, or corn. There will be some potatoes but they will be limited to only two days max.

    My DH does get credit for giving me the most creative egg in my Easter basket. It is a small watermelon and it was in my basket. He does think outside of the box.
