Chicken tacos

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here's our menu for the week:

Baked flounder, rice, green beans

Al Fresco chicken burgers, pasta salad with veggies

Chicken tacos with all the veggie and sauce fillings, corn

Spaghetti, sauteed zucchini, mushrooms and onion, garlic bread

Turkey and Swiss melts on rye with spinach, tomato and onion, deviled eggs (for my youngest who loves them) and a fruit salad

    Losltp - thank you for the recipe for the applesauce cake! It sounds wonderful and I'm definitely going to try it.

    Would you please email me a copy? My printer took itself offline and I have yet to figure out how to get it printing again.

    And yes, the weather did clear up, so hot dogs are back on the menu. Oh, goody. ;)

    NOTE for cake : I DID IT - less than 1000 !!!
    I have used this recipe for muffins , cupcakes ( frosted muffins ?) , bundt cake, layer cake and sheet cake - it has never failed . It freezes well too .
    It is easy to play with the ingredients - I reduced the sugar and salt with no problems and I changed the shortening to butter ( much better taste !) -
    the really good cooks here should be able to create the supreme applesauce cake !
    One suggestion in the cookbook is add 1 cup of shredded carrots.

    PS I made a butter cream frosting using apple juice instead of milk/cream and adding a little of the cinnamon, cloves and allspice. ENJOY !!

    APPLESAUCE CAKE :( Preheat oven to 350 or your oven or cookware's specifications )
    Recipe : 2 1/2 cups all purpose flour, 2 cups sugar( I use 11/2 cups with problems or complaints), 1/2 water, 1 cup raisins (I soak them in the water for a short time to make them softer ), 1/2 cup shortening ( butter can be substituted, 1 1/2 cups applesauce ( unsweetened - I use store brand no sugar added if I have none made) , 2 eggs,1 1/2 tsp bkg. soda,1 tsp salt, 3/4 tsp ground cinnamon,1/2 ground cloves, 1/2 tsp ground allspice, 1/4 tsp bkg powder, 1/2 cup walnuts( optional _ i did use pecans once - delicious !)
    Dump all ingredients in mixing bowl beat on slow 30 seconds then high for 3 minutes scraping bowl frequently . pour into pans. bake until toothpick in center comes out clean . THe 2 9 x 9 glass pans I used today took about 40 minutes at 325 ( manufacturer of the pans suggests reduce temperature for glass pans by 25 degrees). Note in next post ..

    Tonight is pasta with sauteed green peppers, spinach, mushrooms, parmesan and marinara sauce. The last of the watermelon for dessert for me and everyone else gets the last of the lemon bars from yesterday.

    That mustard sauce does sound good! And congrats on getting the house put together!

    jdouglas13 - I know how much you dislike hot dogs, but I have bad news. The sky cleared up and you don't have an excuse to make something else. LOL

    Went back to work today.. I'm a teacher. So my menu this week isn't the greatest but oh well!
    Dinner tonight was hamburger helper lasagna with rolls
    Tuesday night: crockpot London broil, mash potatoes and gravy, green beans
    Wednesday: breakfast for dinner
    Thursday: loaded baked potatoes
    Friday: to be decided
