Spinach, tomato and mushroom baked omelet

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here's our menu for the week:

Loaded baked potatoes (choices including turkey bacon crumbles, cheese, chives, sauteed mushrooms and green peppers, butter, sour cream) and salad

Chicken breasts in the slow cooker with a Tuscan spice blend I picked up in Blowing Rock at a tea and spice shop this weekend. It smells divine so we can't wait to try it. Sides of rice and green beans.

Spinach, tomato and mushroom baked omelet (using a delicious recipe from RaleighFoodBlogger's website at http://www.dandeliongreensblog.com/2014/02/spinach-and-scallion-cream-cheese-baked.html. ) Side of fruit salad and maye croissants.

Beef stew in slow cooker with carrots, mushrooms and onions served on pasta.

Pizza night! Veggie pizzas (with mushrooms) with sides of corn on the cob and watermelon.

And yes, there are mushrooms in 4 of my meals this week. But most of you know that I have a thing for mushrooms. I am thinking that maybe I should become a mushroom farmer.

    jdouglas13 - the traffic was ridiculous this morning! I had to take a back road to get around the hwy 42 paving as well after sitting in the line for about 10 minutes without moving. It was very backed up in every direction. Glad you got the ciabatta bread.

    We were up early because DW had an 11:30 Dr.'s appt in Apex. There was a big accident on 70 which closed all the lanes near White Oak where the entrance to I40 is. So we turned around and took back streets to 42 where they are repaving the road. After sitting for 15 minutes, I lost patience and started honking at the guy holding the stop sign and pointing at my watch. FINALLY we started moving. When we got to Apex, there was more construction on 64 with more closed lanes. I said to DW that this morning must have been a test of my knowledge of back street shortcuts in NC. Considering everything, we were only 20 minutes late. Not bad.

    On the way back we stopped at HT, got 3 ciabatta bread, and 3 bottles of All detergent -- all for free! My first all freebie till DW threw something in the cart.

    Finally we stopped at the NC Farmers Mkt and I bought a 25 lb box of plum tomatoes to attempt fire roasting in the oven and freeze for the winter. Perfect weather for it lol ;)

    LINDABATES- here's the recipe link! I haven't tried it, so I'm not sure... but it sounds delicious!     Ascherer~ feel free to come to dinner one night... I don't eat the pasta, or potatoes and limit the bread I eat... I make it for the family but you'll find me eating lots of salads and other veggies... I am going to have a very small loaded potato this week though!
