Chicken quesadillas

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On our menu this week you will find the following oven-free meals. When the temps are 100 degrees, my oven does not come on!

Monday: Chicken & veggie quesadillas, corn, watermelon (I'm using leftover chicken made in the slow cooker on Sunday)

Tuesday: Salmon burgers, pasta salad, sugar snap peas

Wednesday: Turkey sausage with sauteed zucchini, onions and mushrooms and leftover pasta salad

Thursday: BBQ Chicken wings, cole slaw, fruit salad

Friday: Something with eggs - either omelettes or egg salad sandwiches. Not sure yet. Side salad. (using eggs from Walgreens for $1.25 per dozen)

    Jdouglas- oh, and it was lemon juice and thyme. I would love to find fresh lemon thyme!!! :-) And on the artichoke. We just like them steamed and dipped in mayo also. They are our favorite- yum!!!

    RFB -- be still my heart. I am CRAZY for lemon thyme. It is almost impossible to find. Separate question -- do you make fresh artichokes? Do you make a dipping sauce for them? I usually just dip them in mayo, but was trying to think of something different. I found a huge beauty that I need to use soon.

    Dinner tonight is a leftover pasta concoction I made last night -- pasta shells and broccoli with a quick alfredo sauce, and the leftover grilled chicken sliced and mixed in. It was really pretty tasty. Tonight we are having it cold because it doesn't reheat well, and I am adding extra broccoli to DW's delight. Cantaloupe for dessert, although I have some chocolate ice cream calling to me! ;)

    Tonight we're doing some lemon thyme marinated chicken skewers grilled on a grill pan. And I'm going to try a new recipe for zucchini feta cakes with sour cream using the zucchini I got at the farmers market over the weekend.

    Faye - thanks We have ordered quesadillas at restaurants - now I want to try them at home .
    I had one with pulled pork recently - it was SO GOOD !!
    Thanks for the sour cream idea for the enchiladas - when we get brave enough to try again I will use that !I will also look for milder sauce ( or find a recipe I can tinker with ).

    I love salmon in any form. Like to bake sockeye with salt, white pepper, sprigs of fresh dill and orange slices over the top. So quick and easy, takes 20 to 25 minutes in a 350 oven. How do you make your salmon burgers Faye? I'm flying solo this week so going to the local Chinese take out at lunch for a lunch combo to heat up for dinner. No hot oven for me.

    losltp - I just use a regular flat skillet for the quesadillas. Works great! Then I top them with tomatoes, romaine lettuce, avocado slices, salsa and sour cream. Soooooooo good. And they are great if you don't like hot sauce because you can use a mild salsa or none at all.

    If you decide you want to give enchiladas another try, there is mild enchilada sauce that is not too hot and I usually add sour cream to the enchilada mix to make it even less hot.

    Looks like many of us are using the slow cooker today (or yesterday) for our chicken dinners tonight. Definitely not a week to use the oven.

    Everyone's meals sound yummy !
    I would go for that salad ASHERER in a split second !
    Faye - your quesadillas sound so good ! Doyou have to have a special pan/appliance to make them ??
    We tried enchilladas but can not tolerate the hot sauce ..
    Dinner no ideas yet - I think the leftovers are all gone so probably grill something or order ( FREE) pizza .
