Baked ravioli and salad

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Our meal plan for the week includes:

Meatless Monday: Baked cheese and veggie ravioli and salad

Tuesday: Turkey and cheese melts, onion rings, steamed carrots (.69 baby carrots at Aldi through 3/3), strawberries, blackberry and banana fruit salad

Wednesday: Breakfast for dinner - Southwestern veggie omelets (with choice of veggies, salsa, avocado), turkey bacon, biscuits

Thursday: French Dip beef sandwiches, sweet potato fries, salad

Friday: Shrimp salad, croissants, green salad

    Tonight we are having baked cheese ravioli with sauteed mushrooms, onions and green peppers, mozzarella cheese, pasta sauce and parm. Serving it with a side salad. Just went by Aldi and picked up some salad veggies at great prices. The Celentano cheese ravioli is on sale BOGO for the 13 oz bags. I'll use 2 bags in this dish.

    PCB, That shrimp chowder really does sound great. And I love omelets for dinner, as you can see from my weekly plan. :-)

    Melissa, your new recipes sound tasty. The chimis and pasta are right up my alley. Thanks for sharing!

    On Saturday, we had the shrimp and corn chowder that I had mentioned. It was so good, and had the shrimp already been peeled and deveined, it would have been a great weeknight quick meal. Another bonus was that it was made mostly from pantry/freezer items that I usually have on hand. We had Caesar salad on the side.

    Last night we had omelets filled with ricotta, sautéed shallots, and herbes de Provence, with oven roasted tomato halves on the side, and the last of the Caesar salad.

    Tonight we are having baked chicken drumsticks with sides TBD.

    My DH requested "something different" for dinner so I searched a whole bunch of recipes and came up with the following (with the exception of tonight as we did not end up having it Friday).

    Monday: Beef Stroganoff; Tuesday: Oven-Fried Chicken Chimichangas; Wednesday: Vegetarian Bean Curry; Thursday: Spinach and Sun-Dried Tomato Pasta; Friday: Burger mystery shop.
