Weekly meal plan and Monday dinners

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here is our weekly menu:

Monday:  Smoked turkey sausage sauteed with mushrooms, onions and asparagus and served on saffron rice (using Butterball turkey sausage and asparagus on sale at HT)

Tuesday: Creamy chicken, cheese and pasta bake with French bread and steamed carrots (Chicken on sale at Food Lion and Kroger through 2/2 and carrots from Aldi)

Wednesday: Salmon, baked potatoes, salad (salmon from Aldi)

Thursday: French dip sandwiches, onions rings, steamed broccoli

Friday:  Homemade veggie pizza, side salad (using Mama Mary's pizza crusts on sale at HT through 2/2 with coupon)

    Tonight was left over super bowl food, pizza, BBQ wings, bread sticks and football brownies. Veggies were eaten up yesterday.

    Don't mean to start an epidemic.......but tomorrows dinner will be BAKED ZITI!!!! It will also be leftovers for wed and for Thursday and Friday I'm not sure. I hear it's going to be super cold on Friday.....so most likely chili on Friday. Maybe something chicken I there for Thursday....i guess lol

    RFB - I'm right with you about the roasted veg. Love them. I have to get back to HT before the sale ends to get some more asparagus. Have you had asparagus on the grill? Insanely delicious.

    YBAverage, I missed the deal on canned tomatoes at Aldi. What was it? I'm always in the market for good deals on canned tomatoes.

    Gator Girll, some braciole recipes also call for raisins and pine nuts. Perhaps it was a rift on that?

    How did I get this old without realizing Mahatma has a saffron rice mix? I love saffron rice, just not the price of saffron.

    I think you might be looking for "Bombay" Sloppy Joes (??) - some have pistachios in the mixture as well as the raisins . Ground turkey in the traditional Indian version instead of beef.

    Tonight we're having smoked sausage (coupon) with onions and peppers and mac ''n cheese. Tuesday will be sloppy joe's with sweet potato fries and pickled beets. Wednesday will be split pea soup and corn bread. That's as far as I've gone so far.

    Years ago I had visited a friend out of state and she took me to an ethnic restaurant for lunch where I had a "sloppy joe" kind of sandwich that was like a sweet and savory version. It had a little kick but also had raisins and spices in it. I have been craving it for years since then. The restaurant closed and my friend couldn't remember what type of restaurant it was. Anybody have any recipes that sound like this? Any idea what ethnicity it might have been so I can do a search? Thanks!

    Wow, all these meals sound great! Well, I just went to Harris Teeter and loaded up on a cart full of fresh veggies (including 3 more of the asparagus on sale). I'm really liking having roasted veggies, and brown rice or quinoa with some sort of protein. Tonight I'll add in some grilled citrus chicken leftover... and maybe some garbanzo beans.

    YES to the pot pie, Jdouglas! That sounds yummy.

    ybaverage2003 - that's a good idea to add the herbs to the corn muffins.
