Pasta Salad


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week we are having:

Monday: Lasagna, garlic bread and salad (leftovers from last night's dinner that a wonderful neighbor made for us)

Tuesday: BBQ chicken sliders, pasta salad with veggies, cantaloupe (Cantaloupe is BOGO at Lowes Foods through 1/20 and chicken breast is $1.97/lb at Lowes Foods through 1/20)

Wednesday: Sesame teriyaki tofu, rice, sauteed peppers, mushrooms and onions, apple slices

Thursday: Beef Stroganoff served on egg noodles with rolls and a salad

Friday:  Pizza night! Homemade veggie pizzas, steamed broccoli, orange slices  (cheese from Harris Teeter for $1.67 per 8 oz bag through 1/20, sause on sale at HT last week)

    Chicken/Beef, veggie and rice soup. Chicken was rotisserie markdown from Walmart.

    Raesmom, just saw your question about the pomegranate vinaigrette. I make it, but it's really easy and takes less than 5 minutes. I can't give an exact since I just add stuff until it tastes right, but it includes: a couple of tablespoons each of frozen OJ concentrate and honey (melt for 15 seconds in the microwave), maybe 1/4 cup each of cider vinegar and pomegranate balsamic vinegar**, a squeeze of lemon juice a little dried tarragon, a bit of dried shallot or dried onion flakes, a pinch of salt, a teaspoon of Dijon mustard, and roughly 1/4 cup of olive oil. Just whisk it all together, or put into a jar with a tight fitting lid and shake. You can sub Pom juice for the pomegranate balsamic vinegar and maybe add a bit more cider vinegar. You can also make your own pomegranate molasses: slowly cook down and reduce by half 2 16-oz bottles of pom juice with 1/2 cup sugar.

    twinredheads - I have found that the first couple times the boyfriends come over for dinner they hardly eat anything. Once they feel more comfortable, they chow down. I even had one ask to take home some leftovers of my chicken alfredo pasta bake one time. It was hilarious! At least you don't have to cook too much for dinner tonight. :-)

    Jdouglas - Yay on remembering to take out the chicken! Your grilled steak for tomorrow night sounds like a great idea with this warmer weather. Our dinner tomorrow is kind of summery as well - BBQ chicken sliders, pasta salad and fruit.

    Raesmom, I am glad the lasagna roll-ups worked out. I also like a lot of sauce so I would have been pouring it on as well.

    I actually took something out of the freezer in time for it to defrost! Woohoo!

    Tonight is going to be breaded chicken cutlets, frozen French-cut green beans, and leftover M&C.

    With this beautiful weather, I took some skirt steak out of the freezer to defrost and marinate overnight., and then grill outside tomorrow. Sides will be my pomegranate salad and baked potatoes.

    Using the leftover taco meat as apparently my daughter's boyfriend does not eat as much as most teenagers and so we have TONS leftover. Choice of soft tacos, taco salad, taco melts or tostadas.

    Yummy menu plan Faye.... haven't done shred BBQ chicken in a long time. Tonight will be left over lasagna roll UPS and mini pineapple upside down cakes for dessert. The lasagna roll ups were tasty. I like very saucy Italian food and I couldn't put too much sauce in the rolls so I poured sauce over them and then topped with me still could have used more sauce.....all in all I would do them again. A lot easier (in my opinion) than an actual lasagna. Rae and I are going to take advantage of this beautiful day and head to Pullen Park for a bit and them to home depot or Lowes to get some paint for her room. She is a big girl now so I'm going to let her pock her color (with my approval of course)

    NannieLion~You are in my thoughts and prayers, I also suggest calling a dietician. When I had the gall stones during pregnancy (worse thing ever!!) and wasn't sure what I could eat.....they definitely helped out with a menu for me. Good luck :)
