Baked breakfast casserole


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Our meal plan for the week includes:

Monday: Baked breakfast casserole with eggs (on sale at HT through 11/18), red peppers (Aldi sale through 11/18), onions (LF sale through 11/18), mushrooms, tomatoes, cream cheese, cheddar cheese (HT sale through 11/18), crushed seasoned croutons (as the crust).  Sides of Pillsbury croissants (HT sale through 11/18) and roasted asparagus (HT sale through 11/18). You can see the basic recipe at the Spoonful of Luxe article link above. The recipe comes from our very own RaleighFoodBlogger (thanks Diana)! I added/changed a few things based on what I have on hand, but it's the same basic ingredients.

Tuesday:  Turkey breast cooked in the slow cooker with gravy, baked sweet potato, steamed broccoli, Sister Shubert's multi-grain rolls

Wednesday: Turkey sandwiches (with leftover turkey), pasta salad, steamed carrots with butter and parmesan (carrots .69/lb at Aldi through 11/18)

Thursday: Spinach and cheese enchiladas (cheese from recent Harris Teeter B3G3F sale. Tortillas from HT when they were $1 per package recently). Sides of corn and sauteed zucchini and onions.

Friday:  Homemade veggie pizzas, green salad

    NAKABI - Thank you. Momma and I will have each other and family for Thanksgiving. For Christmas, my Brother and his family will join us. I am sure there will be some tears but there will be some laughter and new memories.

    No meal plan this week at our place. DH had a meeting tonight and a day trip tomorrow. So I just have to take care of feeding me. Still waiting to figure out what the rest of the week looks like.

    Tonight I am having dessert first. I have been craving watermelon and finally picked a half one on sale at Kroger today. I will eat whatever I end up pulling out of the fridge.

    Everyone's menus and meals sound yummy.

    Using up the last of the chicken stock from the roast chicken over the weekend and making chicken and gnocci. Quick, easy, and yummy on this cold autumn day! We are having cooked apples and steamed broccoli as well. Lemon & blueberry cake we made yesterday for dessert.

    Chicken/beef marsala pot pie. Still eating up leftovers so I thought I would give it a new look/name. Turned it into a stew and put it in a pie crust.

    Tonight I'm going to grill up some of that marked down chicken from Target in my grill pan and on the side use up some of the asparagus from HT sale and lentils from past HT sale with a recipe I found yesterday that looks delicious- Roasted Potato and Lentil Salad with Tangy Lemon Mustard Dressing

    jdouglas13 - your menu looks delicious! Sorry they won't go for breakfast for dinner up there, though.

    I made a huge stock pot of vegetable beef soup last night and that's going to be "dinner" for most of the week. I have 9 containers in the refrigerator. This was after we ate 4 bowls last night and I gave a big container to my neighbor. WOW!

    Faye, I like your additions to RFB's baked omelet. If I thought I could sell breakfast for dinner here, we'd definitely have it.

    Last night we had roasted pork tenderloin, roasted fresh brussel sprouts, and roasted sweet potato chunks, all of which was drizzled with EVOO and liberally seasoned with garlic powder. It was an super easy, one dish meal, with no clean up since I used a foil and parchment lined half-sheet pan.

    Not quite a menu for the week, but I am planning to make lasagna one night (hopefully for 2 meals), pork tenderloin piccata with rice, fish with a baked potato and broccoli for Dad on Friday. Tonight I think we are having breaded chicken cutlets, green beans, and small pasta shells with a bit of an alfredo sauce.

    LOL Faye.....he caught that thing by the foot and it dragged him all over the forest hahahahahahahahah. Totally not true, but could you imagine! I didnt think I can use any other word so hope that can put a smile on someones face or make someone else lol today
