Chicken sausage with asparagus, rice and sauteed veggies


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Our meal plan for the week includes:

Monday: Butterball smoked turkey sausage with green peppers, onions and mushrooms. Sides of rice and fruit salad (using the raspberries and blackberries on sale at Harris Teeter through Tuesday)

Tuesday:  Spinach and cheese enchiladas (cheese from recent Harris Teeter BOGO sale. tortillas from HT when they were $1 per package recently). Side of green salad with tomatoes, cucumbers, onions, carrots, black olives and a light Italian dressing.

Wednesday: Teriyaki chicken with broccoli, carrots and onions served on rice  (chicken breast $1.99/lb, free Mahatma rice, Steamfresh broccoli on sale recently)

Thursday:  Garlic shrimp with pasta and veggies (zucchini, squash, onions)

Friday:  Breakfast for dinner including pancakes, Butterball turkey bacon, scrambled eggs (with green peppers and mushrooms) and orange slices

    I think I have most of a menu for this week. Lets see how it works. Veggies will be added at the last minute.

    Meatloaf with mashed potatoes.
    Pork chops with baked beans and applesauce.
    Homemade chili (yes I am making another one. I like to keep some in the freezer but it takes me a solid 24 hours to make it.)
    Ham and beans. (Some will get frozen.)
    Gourmet buffet.

    Almost everything was on sale at Kroger yesterday between the sales, manager mark downs, and digital coupons.

    Faye- thanks for the reminder on the blackberries! I think I'll do my balsamic blackberry chicken tomorrow! And today has been chipotle for lunch and probably a big salad for dinner. Every other week my DH has Mondays off, so we're still on our weekend :-)

    Its funny Faye, after a few days she doesnt want to eat what we bake....I think for her its more the mess, I mean masterpiece she creates in the kitchen ;)

    LOL Losltp!! She is home with daddy this week and was home a few days last week with him.......they had a blast painting pictures....I have no more room on the fridge.....anyone want an authentic painting from the multi-talented Rae????

    Raesmom - I'd offer Rae some of the chocolate chip banana muffins I baked this weekend, but there is only one left and once the teens get home...well, you know what will happen. lol

    Tonight will be left over spaghetti and meat sauce. Rae and I had a busy weekend (girls night Saturday, church and play date on Sunday) so we have not been able to make the halloween blondies, but I swear they will be made today!! My poor baby has been asking her nanny to make a cake (her nanny doesnt bake) She says "lets make a cake", nanny says, "I dont have a cake to make and I dont know how", Rae says "call my mommy she tell you" LOL she is suffering from baking (or what I call mess making) withdraw!

    I sorted and rearranged my freezer this weekend. YI am cooking items from my refrig and freezer so it is chicken and vegetables stir fry (broccoli, onion, orange peppers, and lots of mushrooms, ginger, garlic, soy sauce) rice, and grapefruit segments for dessert.
