An update... and kind of in shock! We made our simple burgers tonight using the grass-fed beef, and I can't believe the difference in taste. So much leaner, yet didn't shrink up or get tough. And incredible flavor (although the first bite threw me off a bit, but then loved it). The ground beef is BOGO through tomorrow at Fresh Market... I'm going back to stock up! :-)

LOL cheesecake it is. Faye, your chip cake sounds good! I wasn't following at first because I was thinking chocolate chips. I used to make chicken coated in potato chips when I was a kid... does that count?

Raesmom, when it comes to pasta and cheese, I'm with you. Nothing else is needed. ;)

For the record - my birthday will be closer to the picnic than Raesmom, so I really think the cheesecake should remain on the menu! lol I am kidding......really :-p

Raesmom - how about a chip cake with alternating guacamole and salsa layers topped with sour cream and cheese? Would that work?! lol

LOL jdouglas with the free cupcakes that i got from amazon local and whatever cake hubby is getting me i think we can pass on the birthday cake. I wouldnt want everyone else to miss out on the cheesecake just bc of lil ol me :)

What would be great is if you can make a chip cake.....NOW THAT WOULD BE AAAWWWEEEESSSSOOOOOMMMMEEEEE!!!!!!! (i have an obsession with chips as you can tell....all kinds, brands, shapes and varieties, and flavors...im not picky lol)

Raesmom, should I be making a birthday cake instead of cheesecake??

Very easy, no cook dinner tonight. Turkey sandwiches. I'll ask DW if she wants a salad, but I can already tell you the answer to that will be no. ;)

Soft Shell Taco night! They're always a fun family meal on nice days. I make the tortillas myself - it's very easy and costs 2/3 less than store bought (tastes better, too) and everyone gets to help out preparing the fillings. Sometimes I use an inverted muffin tin to bake "taco bowls" to hold all the ingredients but I think skip the oven on such a nice warm day.

Friday night we made home made pizzas for my in-laws. We had enough of everything to make 4 pizzas but only needed three. So now that most of the family has left town again we are going to make the fourth pizza for my mother-in-law tonight. We're using a HT dough ball out of the freezer from the $1 sale last week, pizza sauce, cheese from B2G3 at Ht weeks ago, and topped with spinach, pepperoni, ham, onios, peppers and mushrooms.

Tonight we are having Italian chicken on farfalle pasta with roasted asparagus and mushrooms (boneless chicken breast from HT meat case for $1.99/lb cooked in slow cooker, asparagus on sale at HT through 4/22, Farfalle pasta free from last HT SD, mushrooms in marked down produce rack for .57 yesterday at HT)

Everyone's menus look great today! Thanks for sharing them.
