Chicken pot pie


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

At the Cafe' du Faye this week, we will be offering the following menu:

Meatless Monday:  Italian pasta bake using leftover pasta shells from last night, ricotta, Bertolli creamy vodka pasta sauce, veggies, shredded cheese and herbs and spices. Sides of rolls and green salad.

Tuesday:  Baked Flounder with Panko and Parmesan (recipe is from HERE, steamed carrots and saffron rice

Wednesday: Chicken and cheese enchiladas topped with avocado slices, tomatoes, chopped romaine lettuce and light sour cream with sides of corn (free Pictsweet at HT this week using .50 coupon from paper recently and $1 sale) and fresh pineapple (.99 Aldi sale - price matched at Walmart)

Thursday: Philly cheesesteak sandwiches, sweet potato fries and salad
When we had these sandwiches last week, my oldest said she wanted them every week. She will be happy to see them on the menu again.

Friday:   Chicken pot pie (using $1.99/lb chicken cooked in the slow cooker), green salad

    jdouglas - I bought one of those boxes of premade frozen thin Philly Cheesesteaks that were BOGO last week and this is the second half of the box. Although the kids loved them, I will not buy them again. I did not realize they were essentially chopped and formed steak, not whole pieces of thin sliced steak. They were also more fatty than I care for. I will use up the second half of the box this week and be done with them.

    Since I know the girls liked them so much, I will make them again. I'll probably use a sirloin steak or maybe even hit a good roast beef sale at the deli.

    You and your black jelly beans! At least I know what to get you for Christmas! lol

    Nakabi, take a look at the gluten free recipes on as well. You might find something there that will work for your FIL.

    Faye, what kind of meat and how did you prepare it for the Philly cheesesteak sandwiches? They sound good and DW would probably love them.

    Last night we ended up having baby back ribs (made in the oven) and rice since the steak I'd hoped to have was still way too frozen. So, tonight it's grilled steak, salad, and garlic bread. Black jelly beans for dessert! ;)

    RFB-I'll look online and see what I come up with. He buys the loaves ON SALE for $5. As you can imagine, he doesn't eat bread that much LOL.

    Nakabi- I don't. We bought several of the Bakehouse GF Bread loafs a few weeks back at Earth Fare (we had a coupon and they were on sale, so I think they were around $1.50?) We don't need to eat GF, but I like to add more healthful ingredients for my DH as he has sandwiches just about every day on the go.

    I just did a search on pinterest for GF bread, and a ton of great looking recipes came up. You might want to start there, and see which ones fit your FIL's needs. And if you find one, let me know... as $5/loaf is WAY too much!! :-)

    RFB-do you have a good recipe for GF bread? My FIL has to eat it and at $5/loaf it would be cheaper for me to make it for him I would think.

    Nakabi- yes! That sounds amazing. And love the carrot addition. Funny... last week I snuck in some grated carrots and spinach as layers in my DH's tuna sandwiches, and he loved it (and surprisingly he loves gluten free bread, too!) And oh, how I wish I could eat nuts!!

    RFB-sounds like we both have salad on the brain :)
    Tonight we are having a salad with baby spinach, cherry tomatoes, grated carrots, avacado, blueberries, strawberries, walnuts, and topped with grilled salmon. Dressing is just simply fresh squeezed lemon juice with a little salt and pepper. Leftover baguette to go with the salad.

    We're doing a salad bar type of dinner. I have romaine & spinach that I'll chop up, add in a variety of lunch meats/cheese, tons of extras in the pantry like chopped pickles and garbanzo beans. Cut up a few hard boiled eggs from a few days ago. Some craisons that I also have leftover. And top it all of with my Honey Dijon Red Onion Vinaigrette and some fresh cilantro. And my DH will add some nuts (I'm allergic!) Yes... our salad are anything but boring :-)

    Tonight will be leftover baby back ribs, mac n cheese, green beans. Later this week will be:

    Tacos and corn

    Steak, potatoes, salad

    That's all I know for now!
