Chicken Enchiladas


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

Here is our menu for the week:


Homemade veggie pizza using Harris Teeter dough ball (on sale through Tuesday for .99) - you can see the recipe for using the dough to make pizza crust at the Recipes link above. Search for Pizza Crust.

Steamed carrots


Chicken enchiladas (using chicken I batch cooked in the slow cooker last week and froze)

Spanish rice (Knorr rice sides on sale with coupon at Harris Teeter through 10/22)

Tangerine slices (on sale at Food Lion through 10/22)


Baked Ziti

Garlic bread

Broccoli florets


Homemade vegetable soup (going to be a chilly day with a high of 60 degrees - good soup day!)

Grilled cheese sandwiches


Egg, cheese and turkey bacon tortilla roll-ups (using HT sale eggs and Jennie-O turkey bought on sale recently with coupon. Tortillas were $1 on sale at HT recently)

Leftover veggie soup

Tangerine slices

    I had forgotten how much I enjoy this salad. DW, on the other hand, looked like I was trying to poison her with it, even though I tried to hid most of her greens with sliced orange and pom seeds. Not a fan of veg, and especially not a fan of mixed baby greens!

    RFB, seriously, if you ever want to talk in more detail offline about having a very easy herb garden, give me a shout. It is really so easy, and so much fun being able to pick your own fresh herbs as you're cooking.

    jdouglas- thanks... I dream about having a huge veggie/herb garden someday, but this actually sounds like something I could do- in real life!! :-)

    sunandsea~ I just chop up some cilantro and squeeze a whole lime into my corn. If im feeling adventurous (not today lol) ill add some chopped up onions as well.

    RFB, lettuce and arugula could not be easier to grow. If you have a big pot (filled with potting soil mix) or some dug up area in the ground, just loosen up the top layer of soil (or if it is on the ground, throw a bag of potting mix on top. Get a few packets of seed, sprinkle the seed on top of the soil. Pat the soil lightly. Water gently and daily until established. Done!

    Burgers on the grill, gnocchi with butter/garlic/parsley, and a salad using the first of our homegrown lettuce, arugula and mesclun. Very excited for that!

    Orange Braised Pork Chops w/Roasted Apples and Sweet Potatoes and a Champagne Vinegar Maple Syrup Sauce... OJ practically free w/ibotta, pork on sale at Target (plus $1 fresh meat coupon), apples ($1 off produce coupon at Target), Sweet Potatoes on sale from Kroger.

    And I'm with you sunandsea... I LOVE cilantro!!!
