Garlic shrimp on green salad

What's on your menu tonight?

Here is our menu for the week:

Meatless Monday: Veggie Quesadillas, Spanish rice, watermelon

Tuesday: Garlic shrimp on green salad, Sister Shubert rolls and fresh peaches from the Farmer's Market on the side

Wednesday: Teriyaki tofu and stir fry zucchini, mushrooms and onions, side of brown rice

Thursday: Chicken tacos with all the toppings, corn on the cob

Friday:  Greek pizza with feta, tomatoes and spinach on a whole wheat pizza dough crust, fruit salad

    Raesmom- I'm so sorry too, hope he gets to feeling better :-(

    Jdouglas- brings back memories! I loved having a salt water tank, but when they have problems... they an be overwhelming!!! Hope you were able to save the fish!

    Raesmom, I'm so sorry your Dad isn't doing well. I truly hope it's nothing serious.

    Faye, glad to hear the weekend was such a great success!

    I'm not cooking tonight. Last night was takeout pizza. Tonight my sister is making the baby back ribs we were supposed to have for Fathers' Day until the saltwater fish tank turned into a geyser. No one felt much like doing anything after we got that mess cleaned up!

    Actually, it's just me. And those aren't technically leftovers--I hate cooking after working all day, so I cook a lot on the weekends and put it in the fridge for the coming week's meals.

    BTW--try sliced kalamata olives & chopped artichoke hearts on those Greek pizzas-YUM.

    So GLAD your weekend was a success Faye !
    I will probably make lasagne this week I checked and all I need to pickup is cottage cheese .
    Best to do it before the hot & humid hit .

    pineapple just came out of the dehydrator - this is the best so far !

    observant - my daughter has been asking for lasagna lately so I may do one next week. It's so hot now that I hate to run the oven!

    Raesmom - we had a great time this weekend. Emma did a wonderful job and it was so nic to spend all that time with family and friends from all over. Thanks for asking! :-)

    Tonight (?)
    grilled chicken breasts
    ( sanderson farms BOGO at Just Save in last week's ad)
    - used coupons off kingsford charcoal $1 off meat
    corn from Walmart sale
    and green veggie - probably green beans from produce stand
    ( already cooked one batch - very ,very good )

    Thinking of making up a batch of lasagne later in the week - freeze in 2 person meal portions to heat & eat later .

    Also craving a loaded homemade pizza

    mmmmmmm yummy I think I may try that Faye thanks for the idea. I have to stop at HT tomorrow to get my Totinos Pizza rolls (for Rae of course) with a $1 off one 40ct or more I found online (YAY) so I will stop and get some dough balls from HT. I only have a half of one at home lol......I'll do veggie for me and bbq chicken for hubby and Rae


    How was the time spent with your family Faye?? I bet you enjoyed it! Mom wont make it out here this week unfortunately. Dad is not doing too good so we may have to take the trip up there soon. Just trying to see how severe it is.
