Posted June 9, 2014

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Here is our menu for the week:

Meatless Monday: Angel Hair pasta, Garlic bread, spinach salad

Tuesday: Chicken & cheese enchiladas, Spanish rice, steamed broccoli

Wednesday: Garlic shrimp (with plenty of Old Bay!), whole grain rice, sauteed zucchini and onions

Thursday: Veggie pizza using HT pizza dough ball, watermelon

Fri - Sunday - I am hosting a large family event this weekend and we have various activities/meals planned

Good, BUT--a little too tangy for me--Worchestershire maybe? Gonna make brown gravy & mix with leftover sauce to mellow that out.

    WFR-how was the roast?

  • Kathy S. Jun 9, 2014

Had hotdogs/hamburger on grill, baked beans and baked potato.

OK, so I ended up doing Roast Pork Lo Mein instead of the fried rice, and couldn't resist adding the recipe here! I was doing a search for recipes with leftover pork earlier, and found this... delicious!

And wow, all these menus look amazing! Love being inspired here every day :-)

UNCW_Ash - I agree with Nakabi abotu the dough balls. They should be just fine in the fridge. And great job planning out the menu. I do love brisket!

Uncw-the dough will be fine until Thursday. I keep mine in the freezer up to a week.

Tonight I am making 'salsa' chicken (but I use rotel instead) with rice. I have the rest of the week planned too, including some leftover Cincinnati chili from the weekend, quesadillas, and probably breakfast as dinner.

Oh, good. Thanks for the review. To me, a pot roast is ALL about the gravy!

Wildfrenchrose, I have used the Campbell's slow cooker tavern roast sauce and it was good. I usually use a pkg of dry onion soup mix and a pkg of brown gravy mix, so this was not as 'oniony' but it was good - made rich brown gravy

M: not sure yet, possibly just leftovers
T: beef brisket in the crock pot served with brown rice and veggies
    W: leftovers
Th: homemade pizza using HT dough ball
F: something kid friendly b/c the hubby and I have plans ;o)

Faye-I bought my dough balls this weekend and put two in the fridge so I didn't have to remember to pull it out to you think it's okay to wait until thursday or should i precook the crust tonight?
