Weekly meal plan and holiday menus

Posted December 19, 2016

Turkey

Here's the place to share your meal ideas for the evening or the week, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

For dinners this week we are having:

Turkey and Swiss melts on rye bread, Steamfresh Rotini and vegetables

Chicken fajitas with sauteed veggies, rice

Spaghetti with Boca veggie crumbles, spinach salad, garlic bread

Multiple holiday gatherings with way too much delicious food! I'm just bringing desserts or appetizers to each one and then our larger family dinner is next week. I'll post my menu then...once I have it figured out.

LindaBates and JDoublas - My heart goes out to you. The first Holiday celebration after losing a special loved one is hard. There will be some tears but there will be special memories and smiles. Let yourselves enjoy the memories and smiles.

Holiday menu! I saw it and sped right past it.

Since it is just the two of us, we get to splurge. Our holiday dinner tradition that we started last year is filet mignon and lobster tails, salad, garlic bread. Dessert will either be a birthday cake in honor of my late Mom who was born on Christmas day, or a lemon meringue pie -- with sugar this time!! -- to make up for the one I botched on Thanksgiving.

lindabates - my heart goes out to you.

UNCW_Ash - I love your "fine" Waffle House tradition! And I need to join you on the treadmill asap!!

EM2S - spiced port poached pears sound amazing. I am totally looking those up.

Tonight is leftover mexican casserole with chips and guacamole. Tomorrow probably chicken with rice and veggies. Wed. Leftover ham from Christmas celebration #1 with mac & cheese and green beans. Thursday and Friday TBD. Saturday is brunch at my in laws followed later with Christmas Eve service #1 then off to our fine tradition of Waffle House then back for the 11 p.m. service at church. Christmas Day we are eating like kings: Brunch then early dinner: Turkey (FREE care of Target Red Perks), mashed potatoes with gravy (Pioneer woman recipes), collards & turnip greens, corn, green beans, green bean casserole, broccoli casserole, rolls, pumpkin pie and more. OMG I need to go jump on the treadmill now.

We're having company over for dinner tonight. We are having a pot roast with red potatoes, carrots, celery, mushroom, and onions all cooked together. We'll have rolls and salad to go with it and either pudding or cake for dessert.

Lindabates, I'm so very sorry about the loss of your grandfather last month. The firsts -- holidays, birthdays, etc., after the loss are painful. This will be my first Christmas with only my DW as what remains of my family.

Yummy menus everyone! Ascherer, I'm drooling over your M&C. ;) EM2S, your menus are always an inspiration. Thanks for sharing the cookie recipe. I'm pinning it for sure.

I got a couple of the oven stuffer roasters at FL yesterday, so I will be having some form of roast chicken with gravy, mashed potatoes, and roasted Brussels sprouts.

Ascherer - Not sure why my scroll wasn't working, but I missed your note. Your leftovers sound excellent to me :)

along with the last of the spiced port poached pears for a mini-dessert plate.

May everyone be well and warm through your busy week!
