Pumpkin French Toast


What's on your menu tonight? Share your frugal ideas for the week or the evening! I've included a new recipe we tried this weekend for Pumpkin Pie French Toast. It was delicious!

On our menu this week you will find:

Meatless Monday:  Baked tortellini and mushroom alfredo, garlic knots, broccoli florets, red grapes

Tuesday: London broil in the slow cooker, mashed potatoes, green salad

Wednesday:  Chicken tacos with all the fillings (tomatoes, lettuce, onions, cheese, sour cream, salsa),  corn, fruit of some kind

Thursday:  Baked lemon and garlic salmon, saffron rice, sugar snap peas, peach slices

Friday: Homemade veggie pizzas and salad - our traditional Friday meal these days!


Pumpkin Pie French Toast

This weekend, we tried a delicious new recipe from www.5dollardinners.com. It was a big hit! I actually quadrupled the batch and froze 2 batches to enjoy in the coming weeks. One batch we ate this weekend and one batch is in the fridge for the next couple days for snacks or breakfast. Instead of homemade pumpkin pie spice, as the recipe calls for, I used McCormick's pumpkin pie spice. Other than that, I followed the recipe exactly.  We topped ours with raspberries and served grapes on the side.  If you are looking for a way to spice up your French toast for the fall, this recipe is a keeper!  You can find the recipe on www.5dollardinners.com.

    jdouglas13 - that's a good tip on the bread! Thanks. :-) And you can't ever go wrong with M & C according to my kids!

    We used Sara Lee honey wheat bread for the French toast that I got on sale at Kroger for .99 a loaf after sale, coupons and promo going on right now.

    Last night we had leftover spaghetti sauce and sausage which was supposed to go over ravioli, but I forgot, so we had it with thin spaghetti instead and Caesar salad on the side.

    It would have been a great night for stew and dumplings or something similar, but DW asked for M&C ?!? We are having some baked chicken drumsticks on the side as well as some French-style frozen green beans. The cheese, chicken, and green beans are all from the freezer, and the M&C will use up the last of the milk that expired a few days ago. Hopefully, she'll be able to eat everything.

    A tip on the French toast -- odd as it sounds, I've been using Arnold sourdough bread for it (when I can get the bread BOGO), and the sourdough really does something to boost the flavor of the French toast. Keep in mind that this is just mild supermarket presliced sourdough and not San Francisco sourdough, so maybe that's why it works??

    Tonight is leftovers-take your pick of various clean out the fridge items. Tomorrow my college favorite: chicken pasta (egg noodles with cream of mushroom soup and green beans). Wed: church dinner, Thursday: Chicken Tenders & some TBD sides, Friday we have a party to attend.

    As for dinner, I think it will be some ravioli's I bought BOGO last month from HT and some of the new garlic pull apart bread from last week w/a side of the pic sweet broccoli on sale B2G3 recently. I have never tried their veggies in the bags and WOW, so far the green beans and broccoli were really good.

    Vegetarian lasagan w/eggplant, spinach, mushrooms, and capsicum. Using cottage cheese instead of riccota since and using up various cheeses I have in the fridge before they go bad. Will have salad using veggies from our garden with it and the last of the French bread I bought on Friday for .49 and make garlic bread with it. Total cost per person should be about $1.39; you can't beat that for a tasty yet semi- healthy meal!!!!

    How funny RFB Im making chili too!! Just a simple ground beef chili with onions, green peppers, corn and tomaotes in it. DH and Rae will have theirs with cheez its, ill have mine with sour cream......"yummy my tummy" as Rae would say lol

    I'm thinking our leftover Roasted Butternut Squash and Spinach Chili (which turned out really good!) will be great for this dreary day! And of course, a large salad on the side :-)
