Meal Plan


Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu this weekend? Do you have any special Labor Day meals planned?

We will be cooking out with family this weekend. We are having a some very typical Labor Day foods including grilled burgers and beef hot dogs, corn on the cob, watermelon, broccoli slaw and something yummy for dessert.  I'll have to get back to you on that one when I decide what we are having! I welcome any ideas.

    RFB - CONGRATS on your awesome grade on your class! I am so impressed with the sheer number of dishes and the complexity of the meals!

    Saturday night we had eggs and turkey bacon on toast with salsa to give it a kick.

    RFB - That is awesome on the class and a great grade. We all know you worked really hard for. You got lucky and got to have fun as you were learning.

    Raesmom - I am glad your Dad is doing better and can go home soon. Try and get some rest before you head home.

    Tonight was pork chops with squash and baked beans. Sunday is going to be grilled steaks, grilled corn on the cob and steamed fresh green beans. I'm still trying to figure out Monday.

    Raesmom, I love that you are teaching your BIL and Rae how to cook/bake. So awesome! :)

    RFB - thanks. I just made up the creamed corn as I went along. I had a mix of fresh corn cut off the cob and some frozen white corn, and simmered it all slowly together in a mixture of milk and water with some sea salt. When it was really tender, I drained off about half the liquid, and pureed it with the immersion blender. It was a little too runny, so I thickened it with some cornstarch, threw in some butter, and that was it. Next time I think I may drain most of the liquid, but reserve it so I can add it if I need it without having to add the cornstarch.

    Thanks for the well wishes everyone, you guys are awesome!

    Im so exhausted from the ride! My dad lit up when he saw me though so that made it all go away :) He is doing better, will be staying one more night in the hospital. All 8 of his kids were able to go see him (he has been there since Tuesday) so he is happy about that.

    Lil BIL requested that I make 9 can taco soup for everyone so since it so simple, I'm going to let him do it lol and that's what's for dinner tonight.

    Raesmom, sending lots of good thoughts to you and your Dad. Let us know how he's doing, ok? You must be exhausted from your drive. Take care of you too.

    Not sure what we're doing for dinner tonight. I'm hoping HT has some fish that looks good. Last night's homemade creamed corn turned out really tasty, if a bit over-pureed, and it was really so simple. And there was no cream or flour involved. Had I known how easy it was to make, I would have made it a long time ago!

    Faye, I have a suggestion for your dessert -- cheesecake?! Add some sliced strawberries on top, and you can call it healthy. ;)
