Two Roosters serves up Kettle Corn ice cream at State Fair
Coffee and Bourbon and Smokey S'more are among this year's new flavors.
Posted — UpdatedRALEIGH, N.C. — Two Roosters Ice Cream is serving up some N.C. State Fair-inspired flavors in the Got to Be NC building at the fairgrounds starting Wednesday.
Here's a breakdown of the flavors from owner Jared Plummer:
Coffee and Bourbon - The days of the fair are long, and tiresome for some. We were thinking of the early birds and the wearisome moms and dads who need a little boost during the fair. We created this flavor in tandem with our local partners, Slingshot Coffee and Mystic Bourbon. It's divine.
Muscadine Jam and Crumble - We use hand picked, fresh muscadines from our friends, Moccasin Creek Farm in Zebulon, and make our own jam. We ripple that in with a sweet, crunchy crumble (think best part of a muffin). It is one of our most unique flavors to-date.
Smokey S'more - We set out to capture a fall campfire in an ice cream scoop, literally. We first cold smoke chocolate callets using Alder wood and then melt it down in to a smokey fudge sauce. Then we make house-made marshmallow fluff (you're killing me Smalls) and set in on fire! We take the fudge and the fluff and ripple it into a graham cracker dust ice cream. It's our number one flavor right now.
Pumpkin and Pecans - We candy pecans with a little cinnamon and brown sugar that are good enough to eat on their own. But then, then we take pumpkin puree, add a blend of Chinese 5 spice and vanilla for our spin on pumpkin spice and everything nice.
Maple Walnut - We roast whole walnuts with maple syrup and a little sugar and then toss in to a maple ice cream. Where are the pancakes??
Kettle Corn - We partnered up with State Farmers' Market staple Uncle Dave's Kettle Corn and reimagined kettle corn into ice cream. Cold Steeped for 24 hours, but a labor of love.
