Though meat is the star, Zeke's Meats' veggies shine, too

Pork and brisket headline Philadelphia native Zeke Firestein's food truck, Zeke's Meats, but the Brussels sprouts—oh, the Brussels sprouts.

The veggies are roasted until they're charred, and then they're topped with smoked salt and an extra sharp cheddar cheese that Firestein grates himself. As Firestein says, it's not all about the main course.

"Zeke's Meats isn't just always just about ingredients, it's kind of about texture and flavor," Firestein told the 919 Beer Podcast. "So, things can be meaty without actually having meat in them."

But don't sleep on the meats, either.

Firestein roasts down the pork or beef until its falling apart. Then, the Italian-seasoned pork gets slapped on a crusty loaf of bread with broccoli rabe, sharp provolone cheese and a spicy pepper called a long hot. For the brisket, it's pimento cheese and pickled onion.

The stellar sandwiches aren't a fluke, either. They're a byproduct of Firestein's love for his food.

"I just think it's analyzing everything and always wanting to put out the best product," Firestein said. "Whether you make beer or you make food or you make medical devices, it's more than just collecting a paycheck, (you have to have a) passion for what you do day in and day out."
