Cookie Swap cookies

At the request of many fellow Smart Shopper readers, here is the fabulous recipe for the Oatmeal Raisin Cookies that one of our readers made for the Cookie Swap last year. Enjoy!

Oatmeal Raisin Cookies

Ingredients

1 cup shortening (Crisco)
1 cup brown sugar
1 cup white sugar
2 eggs, well beaten
1 teaspoon vanilla
1 ½ cup flour (plain)
½ teaspoon salt
1 teaspoon baking soda
3 cups Quaker Oats (not quick)
1 cup raisins
1 cup pecans (optional)

Directions

Preheat oven to 350. Thoroughly cream the shortening and sugar together. Add the beaten eggs and beat well. Stir the dry ingredients and add to mixture. Add the oatmeal, raisins and pecans (optional). Make into balls and cook at 350 for 8-10 minutes or longer depending on your oven (keep a check on them).

Makes roughly 48 cookies depending on the size that you make them.

Note: If you do not use pecans, add ½ cup more raisins
