Thanksgiving menus and Wednesday dinners!

Pumpkin pie

 

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

For Thanksgiving this year, we are having turkey, of course and a brisket that my cousin is making.  Sides include broccoli slaw, stuffing, green bean casserole, sweet potato casserole, rolls, pumpkin pie, coconut custard pie and whatever else everyone brings!

It's a pretty traditional menu other than the broccoli slaw and coconut pie.  My mom used to make the broccoli slaw and my kids love it so I make it every year. My dad actually requested the coconut pie this year so that's why it is on the menu. We all love coconut so it's a great addition!.

The Coconut Pie recipe I am using can be found on BettyCrocker.com. It's more of a custard than a pie and it is fabulous if you like coconut. I serve it with whipped cream.

    Happy Thanksgiving to all of my blog family!!! Enjoy all the delicious food!
    For Thanksgiving I am roasting 2 turkeys (so that we have 4 legs lol), sweet potatoes, bacon wrapped fresh green beans, macaroni and cheese, yeast rolls, and stuffing. I am making the above as well as 2 Ugandan dishes, nkoko and sukuma wiki (chicken stew and greens similar to collard greens). We have friends from 8 other countries coming over as well as our families so we will have food from USA, Uganda, Viet Nam, Mexico, Tibet, Korea, Phillipines, Egypt, and Turkey. Everyone is bringing 2 dishes from their country so I'm excited to taste it all! Our list grew from 35 to 42 so hopefully all the food will be eaten!!!

    sunshineonmyshoulder - based on your username, I am wondering if you are a John Denver fan. I saw him perform at Red Rocks in Denver many years ago and he was wonderful!

    Tonight's pre-Thanksgiving dinner was topped off with the Angus Barn chocolate chess pie. The recipe is easy and it is wonderful! You can google for the directions.

    Some of my family has to work on Thanksgiving so we have a rib roast on Thursday - with roasted potatoes, asparagus, homemade rolls and chocolate pie .
    Our traditional turkey meal will be on the weekend - roasted fresh turkey with homemade stuffing ( fresh cornbread, homemade bread, spices, onions , celery,...), sweet potato casserole with pecan topping , corn ( got some wonderful ears at Walmart - so it will be fresh cream style this year ) , green beans ( also fresh from Walmart ) , homemade rolls ,homemade cranberry sauce,& pumpkin pies with whipped cream .

    Since we still live close to both of our families we are not having anyone over for Thanksgiving this year. Instead we have 2 meals with the in-laws on Thursday and 2 meals with my family on Friday.

    Thursday we are responsible for frying the turkey and making the corn bread, pumpkin pie and chocolate chess pies.

    Friday's menu includes: deep fried turkey, spiral sliced ham, mashed red potatoes, giblet gravy, brown gravy, stuffing, green bean casserole, cauliflower casserole, sweet potato casserole, home made bread, cranberry sauce, pumpkin pie, chocolate chess pie, and ice cream. We are responsible for frying the turkey and making the pumpkin pies and chocolate chess pies and taking the ice cream.

    And then on Saturday we will go shopping and walk off all that food! :) Happy Thanksgiving everyone!!!

    We have a family member that will be in rehabilitation this year, however, we are making the best of it. Not a "normal" Thanksgiving, but as long as we have each other that's all that matters.

    We are having not-fried turkey. My dad has a cooker similar to a turkey fryer, but it doesn't need the oil to cook. It tastes like fried, but no added fat at all. Yummmm! We will also be having dressing, gravy, green bean casserole (I always add some shredded cheese to mine), sweet potato casserole, corn, collard greens, pecan pie and chocolate cake.
