When we first saw the Barbecue Sundae on the menu at the Pik 'N Pig stand near Kiddieland at the N.C. State Fair, we immediately thought of ice cream covered in barbecue pork. Well, this sundae doesn't have any ice cream. It is more of a barbecue parfait with layers of baked beans, barbecue pork and topped with cole slaw. Just squirt your sauce inside and mix!

Owners say the sundae started out as a carb-free alternative, but quickly evolved into a top-seller. They said they sell as many of the sundaes as they do their sandwiches.

For $7, this is a meal in a cup that we will be trying again!

And if you like what you taste, they have a brick-and-mortar location in Carthage.
