Monday meal plan 10/17
On the menu this week we have homemade vegetable soup, lowfat turkey hot dogs, honey chicken, spinach and tofu enchiladas, baked chicken and sandwiches.

Lowfat Oscar Mayer turkey hot dogs (free with coupon from Facebook promotion about a month ago) If you want hot dogs this week, Hebrew National all beef hot dogs are on sale BOGO at Harris Teeter for $2.67 through 10/18.

Homemade vegetable soup with pasta (I am making a big batch of soup and freezing in meal portions to enjoy during the next month or so). I don't really follow an exact recipe when I make veggie soup. I usually saute the onions, fresh garlic, celery, carrots and mushrooms before adding the broth, tomatoes and other veggies. I then throw a bunch of veggies (canned tomatoes, squash, zucchini, mushrooms, onions, carrots, celery, corn) into a big pot of veggie broth. Simmer for hours, then add cooked pasta at the end. I season with bay leaves, oregano, parsley, pepper. I top it off with a little Parmesan once it is in the individual bowls. Click HERE for a good basic vegetable soup recipe.
