Since my girls are starting the new school year on Monday, I did a little batch baking today and made a bunch of banana muffins for their lunches. Lowes Foods had some ripe bananas marked down earlier in the week and they were perfect for muffins today. I finally had to cut off the hubby and kids from eating the muffins so I actually had some to put in the freezer!
You can find the easy recipe I used at SimplyRecipes.com. I did not include the coffee or any nuts because I don't like coffee and one of my girls is in a nut-free school. You can make the recipe a little healthier by using whole wheat flour or a mix of half whole wheat and half white flour.
